- 3/4 teaspoon smoked paprika, divided
- 3/4 teaspoon salt, divided
- 1/4 + 1 pinch black pepper, divided
- 1/2 cup diced red onion
- 1 cup diced green pepper
- 1 clove garlic, minced
- 1 1/2 cups cooked black eyed peas, or 1–15 ounce can rinsed and drained
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 8–10 corn tortillas
- 1/2 cup pomegranate seeds
Optional toppings:
- Guacamole
- Shredded Lettuce
- Fresh Cilantro Leaves
- Salsa
- Lime wedges
- Dairy-free sour cream or crema
Instructions
- Pre-heat the oven to 400 degrees Fahrenheit (200°C). Place diced sweet potatoes on a large sheet pan. Drizzle them with 1 1/2 teaspoons of olive oil, 1/4 teaspoon of salt, 1/4 teaspoon of smoked paprika, and a pinch of black pepper. Toss gently to ensure all the sweet potato cubes are evenly coated. Roast in the preheated oven until the sweet potatoes are tender and slightly caramelized, which typically takes about 25 minutes. Remember to flip them once halfway through the cooking time to ensure even roasting. Once done, set the roasted sweet potatoes aside.

Stir everything together thoroughly and continue to cook for another 5 minutes, ensuring all the ingredients are well combined and heated through.

This can be done in a dry skillet over medium heat for about 30 seconds per side, in the microwave wrapped in a damp paper towel, or quickly over an open flame for a slight char. Once warmed, scoop about 1/4 to 2/3 cup of the flavorful black eyed pea and sweet potato filling into the center of each tortilla.
