Welcome, fellow bakers and sweet tooth enthusiasts! Following the delightful reception of our Vegan Soft and Chewy Molasses Cookies, which kicked off our special “Cookie Week,” I’m thrilled to unveil a recipe that promises to be a game-changer: my definitive take on The Best Vegan Chocolate Chip Cookies. Prepare yourself for a baking experience that yields unbelievably delicious, dairy-free chocolate chip cookies – so good, you might just keep them all to yourself!

The journey to perfecting a vegan chocolate chip cookie that stands toe-to-toe with its traditional counterpart involved a lot of testing and, perhaps most importantly, listening to what truly matters. I recently conducted an informal poll on Instagram, asking whether my followers prioritized “taste” or “healthy ingredients” when it came to vegan chocolate chip cookies. While a commendable few leaned towards healthier options, the overwhelming majority voted for one thing: exceptional taste. And that, my friends, is precisely what this recipe delivers. These cookies are crafted to replicate the classic, comforting flavor and texture we all adore, all while being completely plant-based.

Essential Ingredients for Your Perfect Vegan Chocolate Chip Cookies

Crafting these extraordinary vegan chocolate chip cookies starts with a careful selection of high-quality, plant-based ingredients. Each component plays a crucial role in achieving that sought-after chewy center, slightly crispy edge, and rich flavor. Here’s a detailed look at what you’ll need and why:

  • All-Purpose Flour: For this recipe, classic all-purpose flour is my go-to choice. It provides the ideal structure and tenderness, giving these cookies that familiar, comforting texture reminiscent of traditional chocolate chip cookies. If you’re looking for a gluten-free option, a high-quality all-purpose gluten-free flour blend containing xanthan gum should work beautifully as a direct substitute. Always ensure your chosen GF blend is designed for baking, as performance can vary.
  • Baking Powder and Baking Soda: The dynamic duo of leavening agents! While many chocolate chip cookie recipes rely solely on baking soda, I’ve found that adding just a quarter teaspoon of baking powder alongside it makes a significant difference. This small addition contributes to a thicker, chewier cookie with a delightful lift. I always recommend using aluminum-free baking soda for the purest taste.
  • Salt: A crucial flavor enhancer! Just a quarter teaspoon of fine salt is incorporated into the dough to balance the sweetness and elevate the chocolate’s depth. But for an extra gourmet touch, don’t skip the pinch of coarse flaky sea salt sprinkled on top of the freshly baked cookies. It offers a wonderful contrast in flavor and texture, truly making the chocolate pop. This topping is entirely optional but highly recommended for an irresistible finish.
  • Vegan Butter: The foundation of rich, buttery flavor. I’ve had excellent results with popular brands like Earth Balance vegan butter and the newer Country Crock plant-based butter sticks. The key is ensuring your vegan butter is thoroughly softened at room temperature. This allows it to cream properly with the sugars, creating a light and airy base for your dough. Different brands can have slightly different water content, but most stick-form vegan butters perform well.
  • Brown Sugar: Light brown sugar is my preference here, as it imparts a beautiful golden hue to the cookies and contributes to their soft, chewy texture due to its molasses content. Dark brown sugar can also be used for a deeper, richer molasses flavor and a slightly darker cookie. Either way, brown sugar is essential for that signature chewiness.
  • Granulated Sugar: Paired with brown sugar, granulated sugar (or white cane sugar) provides the necessary crispness around the edges and helps achieve that perfect spread. The combination of both sugars ensures a balanced texture – chewy in the center, slightly crispy on the outside.
  • Vegan Egg Substitute (Flax Egg): My secret weapon for a light-colored, perfectly bound vegan cookie is a flax egg. Made by simply mixing ground golden flaxseed with water and letting it sit, it creates a gelatinous binder that mimics the function of a chicken egg without imparting a strong flavor. Most other commercial vegan egg substitutes should also work, but flaxseed remains my top recommendation for its reliability and neutral taste.
  • Vanilla Extract: Never underestimate the power of good vanilla! A generous two teaspoons of pure vanilla extract infuses the cookies with a warm, inviting aroma and enhances the overall flavor profile, complementing the rich chocolate beautifully.
  • Vegan Chocolate Chips: The star of the show! It’s essential to use truly vegan chocolate chips or chunks. My personal favorite are Enjoy Life Foods vegan dark chocolate morsels for their consistent quality and delicious flavor. However, their chocolate chunks or even mini chocolate chips can be used interchangeably depending on your preference for chocolate distribution. Feel free to be generous with the chocolate – you can never have too much!

Crafting The Best Vegan Chocolate Chip Cookies: A Step-by-Step Guide

Creating these incredibly satisfying vegan chocolate chip cookies is a straightforward and rewarding process. With just a few simple steps, you’ll be on your way to enjoying warm, gooey, and perfectly baked plant-based treats. Follow these instructions carefully for optimal results:

  1. Prepare Your Vegan Egg and Dry Ingredients: Begin by preparing your flax egg. In a small bowl, combine 1 tablespoon of ground flaxseed with 3 tablespoons of water. Stir well and set aside for at least 2-3 minutes to allow it to thicken into a gelatinous consistency. While your flax egg is setting, in a separate medium-sized bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Ensure these dry ingredients are thoroughly combined to guarantee even distribution throughout the dough.
  2. Cream the Vegan Butter and Sugars: In a large mixing bowl, add the completely softened room-temperature vegan butter along with both the light brown sugar and granulated sugar. Using an electric mixer (handheld or stand mixer), beat these ingredients together on medium speed until the mixture becomes light, fluffy, and noticeably paler in color. This typically takes about 3 minutes. Properly creaming the butter and sugar incorporates air into the mixture, which is vital for achieving a tender cookie texture.
  3. Incorporate Wet Ingredients: Add the prepared flax egg and vanilla extract to the creamed butter and sugar mixture. Continue beating with the electric mixer until all the wet ingredients are thoroughly combined and smooth. Scrape down the sides of the bowl as needed to ensure everything is fully incorporated.
  4. Combine Wet and Dry Mixtures: Gradually add the flour mixture to the wet ingredients in the large bowl. Mix on low speed, just until the dry ingredients are fully incorporated and the dough comes together. Be careful not to overmix at this stage, as overmixing can lead to tougher cookies. Stop as soon as no streaks of flour remain, and the batter easily forms a cohesive ball.
  5. Fold in the Chocolate Chips: Gently fold in your chosen vegan chocolate chips or chunks. Mix just until they are evenly distributed throughout the dough. You want every bite to be loaded with delicious chocolate!
  6. Chill the Dough (Highly Recommended): While you can technically bake these cookies immediately, I strongly recommend chilling the dough for at least one hour before baking. Chilling allows the flavors to meld, the gluten to relax, and prevents the cookies from spreading too much, ensuring a thicker, chewier final product. For even better results, you can chill the dough for up to 5 days in the refrigerator, wrapped tightly.
  7. Bake to Perfection: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat. Scoop the chilled dough into balls of your desired size (for larger, chewier cookies, make them about 2 tablespoons each) and place them on the prepared baking sheet, leaving enough space between them for spreading. Bake for approximately 10-12 minutes. The cookies are perfectly done when the edges are lightly golden brown, but the centers still look slightly underdone and soft. They will continue to set as they cool, resulting in that wonderfully gooey interior. For an extra touch of thickness and a lovely crinkled top, I sometimes remove the baking sheet after about 5-7 minutes and gently bang it on the top of the oven or a heat-safe surface. This deflates the cookies slightly, creating those desirable ripples. Repeat this technique once or twice during baking if you like.
  8. Cool and Enjoy: Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire cooling rack to cool completely. This helps them firm up without losing their tender center. Once cooled, they are ready to be devoured!

Vegan Chocolate Chip Cookie Recipe: Your Top Questions Answered

Here are some of the most common questions I receive about this recipe, along with my expert tips to ensure your baking success!

  • Do I really need to chill the dough before baking it? Yes, chilling the cookie dough is a highly recommended, almost essential step for the best results. The primary reason is to prevent the cookies from spreading too much in the oven, ensuring they maintain a desirable thickness and chewy texture. When the dough is cold, the fat (vegan butter) takes longer to melt, allowing the cookies to set and rise slightly before spreading out. While they will still taste good if you skip this step, they’ll likely be much thinner and might lose some of that satisfying chewiness.
  • How do I know when they’re perfectly done? Achieving the perfect balance of crisp edges and a gooey center is an art! I advise keeping a close eye on your cookies as they bake. Look for edges that are lightly golden brown, while the tops still appear slightly soft and perhaps a touch underbaked. This ensures that as they cool, the residual heat will finish cooking them, leaving you with that irresistible gooey interior. Every oven is different, so trust your eyes and don’t be afraid to pull them out a minute or two early if you prefer a softer cookie.
  • Why are my vegan chocolate chip cookies flat? Flat cookies are often a result of dough that hasn’t been chilled sufficiently, butter that’s too warm, or an imbalance in ingredients. Ensure your vegan butter is softened but not melted. Always chill your dough for at least an hour, or even longer, to allow the fats to solidify and prevent excessive spreading. Too much leavening agent or not enough flour can also contribute to flat cookies.
  • Can I add other mix-ins to the dough? Absolutely! This recipe provides a fantastic base for customization. Feel free to incorporate other vegan-friendly mix-ins like chopped nuts (walnuts, pecans), dried cranberries, shredded coconut, or even a sprinkle of espresso powder for a mocha twist. Just be mindful not to overcrowd the dough, which can affect its texture and structure.
  • Can I freeze the cookie dough? Yes, this dough freezes beautifully! To freeze, form the dough into balls as if you were going to bake them, then place them on a parchment-lined baking sheet and freeze until solid. Once frozen, transfer the dough balls to an airtight container or a Ziploc freezer bag. They can be stored for up to 3 months. When ready to bake, you can bake them directly from frozen, adding a few extra minutes to the baking time, or let them thaw in the refrigerator overnight.
  • Can I refrigerate the dough before using it? Yes, and it’s highly recommended! As mentioned, chilling the dough for at least 2 hours significantly improves the cookie’s texture and reduces spread. You can refrigerate the dough, tightly wrapped, for up to 5 days. This makes it a fantastic make-ahead option for fresh cookies throughout the week.
  • What is the best way to store baked cookies? To keep your vegan chocolate chip cookies wonderfully soft and fresh, store them in an airtight container at room temperature. A little trick I love is to add a slice or two of plain bread (any type works) to the container. The bread helps absorb moisture, keeping the cookies soft for several days. Enjoy them within 3-4 days for optimal freshness.

Description

These really are the Best Vegan Chocolate Chip Cookies! You won’t be able to eat just one!

Ingredients

Scale

  • 1 3/4 cup all purpose flour, GF AP flour would probably work too
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup softened vegan butter
  • 1/2 cup light brown sugar
  • 1/4 cup cane sugar or granulated sugar
  • 2 teaspoons vanilla extract
  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, let sit for 2 minutes)
  • 3/4 cup chocolate chunks or chocolate chips, or more if you like!
  • Flaky sea salt (optional)

Instructions

  1. Prepare your vegan egg and set aside until ready to use. Mix together the flour, baking soda, baking powder and salt in a medium sized bowl.
  2. Next, add your softened butter to a large bowl, along with the brown and white sugar. Use an electric mixer to beat the butter and sugar together until light and fluffy, about 3 minutes. You want to make sure the butter is completely softened at room temperature.
  3. Add in the vegan egg and vanilla extract and beat again until everything is combined.
  4. Add the flour mixture to the butter and sugar mixture and beat until everything comes together and you can easily form the batter into a ball.
  5. Add in the chocolate chips and mix until they’re completely incorporated.
  6. You can bake these cookies immediately if you want to, but I prefer to chill the dough for at least an hour before baking. Dough can be chilled up to about 5 days in the refrigerator if needed.
  7. Pre-heat oven to 350 degrees F. Form the dough into balls, any size you like, and place on a baking sheet. Bake cookies until the bottom is just browned but the top still looks a little bit underdone (they will finished cooking as they cool and this will ensure that they are gooey on the inside). Cookies will take about 10-20 minutes total, depending on how big you make them. I like to take the cookies out after about 10 minutes and bang the cookie tray on the top of the oven so that they aren’t quite as thick. Sometimes I do that a few times during the cooking process.
  8. Remove cookies from the oven and place on a cooling rack until ready to eat.

Notes

Recipe makes 12-20 cookies, it just depends on how big you make them.
