Description

These Roasted Summer Vegetable Meal Prep Bowls are filled with your favorite healthy summer vegetables! They’re nutritious, incredibly filling, and absolutely delicious. Make a batch on Sunday and enjoy them for lunch throughout the week!


Ingredients

  • 1 large zucchini, diced
  • 1 large summer squash, diced
  • 1 pint cherry tomatoes
  • 1/2 medium red onion, diced
  • Olive oil
  • Salt
  • Pepper
  • Dried Italian seasoning
  • 3/4 cups quinoa, rinsed
  • 2 cups chickpeas, drained and rinsed
  • Fresh herbs for garnish (basil would be great!)
  • Balsamic dressing, homemade or store-bought

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Place the diced zucchini, summer squash, red onion, and cherry tomatoes on a large baking sheet. Drizzle with 2-3 teaspoons of olive oil and season generously with salt, pepper, and Italian seasoning. Ensure all vegetables are evenly coated. Roast for 30 minutes, or until the vegetables are tender and begin to caramelize, developing a beautiful golden-brown hue.
  2. While the vegetables are roasting, prepare the quinoa. Add 3/4 cup of rinsed quinoa to a medium-sized pot and cover with 1 1/2 cups of cold water. Remove from heat and fluff with a fork. Set aside.

In each bowl, evenly distribute 1/4 of the cooked quinoa (approximately a generous 1/2 cup), 1/2 cup of chickpeas, and 1/4 of the roasted vegetables.
