- 12 ounces of your favorite pasta, gluten free or regular (e.g., fusilli, rotini)
- 2 cups diced asparagus, cut into 1-inch pieces
- 2 cups sugar snap peas, cut in half (measure after cutting)
- 2 cups fresh watercress leaves
Dressing:
- A little less than 1/3 cup extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 1/2 teaspoons Dijon mustard
- 1 teaspoon maple syrup, or honey (for non-vegan option)
- 1 clove garlic, minced very finely
- 1/4 teaspoon freshly ground black pepper
- 1/2 teaspoon salt, plus additional for seasoning to taste
Instructions
- Prepare the Dressing: In a small bowl, combine all the dressing ingredients: olive oil, fresh lemon juice, Dijon mustard, maple syrup (or honey), minced garlic, black pepper, and salt. Whisk vigorously until all ingredients are well combined and the dressing is emulsified. Set the dressing aside to allow the flavors to meld.
- Cook Pasta and Blanch Vegetables: Fill a large pot with water and bring it to a rolling boil. Add your chosen pasta and a generous pinch of salt to the boiling water. While the pasta is cooking, prepare an ice bath by filling a large bowl with cold water and plenty of ice cubes. Cook the pasta according to the package directions until it is al dente. During the last 2-3 minutes of the pasta’s cooking time, add the diced asparagus and halved sugar snap peas to the boiling water with the pasta. Let them cook for exactly 30 seconds to lightly blanch them. Immediately use a slotted spoon to scoop out the blanched vegetables and submerge them into the ice bath to halt the cooking process and preserve their vibrant color and crisp texture. Once the pasta is perfectly al dente, drain it thoroughly and set aside.
- Assemble the Salad: Transfer the cooked pasta to a large mixing bowl. Drain the blanched vegetables from the ice bath very well and add them to the bowl along with the fresh watercress leaves. Drizzle your desired amount of the prepared dressing over the pasta and vegetables. Toss gently but thoroughly to ensure all ingredients are evenly coated.
