  • 1/2 cup dried cranberries
  • 1/2 cup diced red onion
  • 1/2 cups chopped, toasted pecans
  • 1/2 cup freshly grated parmesan cheese (use vegan parmesan for a vegan salad)
  • 1/2 cup chopped Italian parsley

Lemon Dressing

  • 1/3 cup extra virgin olive oil
