It’s a truly awesome spectacle, sometimes so intense it can lead to exhilarating flash floods – a powerful display of nature’s might, beautiful to observe from a safe distance, but undeniably dangerous up close.

However, this particular monsoon season has proven to be an exercise in patience, and frankly, a source of growing frustration. For weeks now, I’ve been gazing up at skies that promise so much – dense, charcoal-grey clouds swirling with the potential for a cleansing deluge. Each morning, I’m convinced today will be the day the rains arrive. Yet, with a cruel twist, the clouds dissipate, the sun bursts through, and the dry spell persists. Their simplicity is their genius; a testament to how humble ingredients, when prepared with care, can yield extraordinary results.

And I can tell you with absolute certainty, the flavors of these calabacitas taste just as incredible and satisfying when tossed with delicate orzo pasta as they do nestled in warm tortillas.   • 1 1/2 cup dried orzo pasta, I used gluten free corn orzo
  • 1 medium squash, small diced
  • 1 medium zucchini, small diced
  • 1 medium red pepper, small diced
  • 1 cup corn kernels
  • 1/2 red onion, small diced
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 cup sliced cherry tomatoes
  • 1 avocado, sliced or diced*

Cilantro Lime Dressing:

  • ½ cup olive oil
  • 1 clove garlic, roughly chopped
  • ½ teaspoon dijon mustard
  • 1 tablespoon shallot, roughly chopped
  • 3 tablespoons lime juice, about limes
  • ¼ cup cilantro
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Heat a large pan over medium heat. Add olive oil, squash, zucchini, red pepper, corn, and all seasonings (salt, pepper, ground cumin, paprika, garlic powder). Cook for about 10 – 15 minutes until vegetables have slightly softened, stirring occasionally.
  2. While the vegetables are cooking, bring 6 – 8 cups of salted water to a rolling boil in a separate pot. Pour orzo into the boiling water and cook according to package directions (typically 8-10 minutes), or until the orzo is tender yet still al dente. Drain well.
  3. In a large mixing bowl, combine the cooked orzo with the sautéed vegetables. Add the sliced cherry tomatoes, diced red onion, and avocado.
  4. To prepare the Cilantro Lime Dressing, add all dressing ingredients (olive oil, garlic, dijon mustard, shallot, lime juice, cilantro, salt, pepper) to a blender or food processor. Blend until thoroughly combined and smooth.
  5. Pour the freshly blended dressing over the salad mixture. Stir gently until all ingredients are well coated and the dressing is evenly distributed. Serve immediately, or chill for a more refreshing experience.

Notes

*If you plan to serve the salad immediately, you can dice the avocado and mix it directly into the salad. However, if you anticipate having leftovers, to prevent browning and maintain freshness, it’s best to dice a few slices of avocado and place them on top of the salad each time you serve it.
