What Exactly Are Smash Burgers, and How Do They Go Vegetarian?

A “smash burger” typically refers to a beef burger patty that is pressed down firmly onto a hot griddle or skillet during the initial stages of cooking. This technique creates a larger surface area that makes direct contact with the heat, resulting in a beautifully thin patty with incredibly crispy, caramelized edges and a juicy interior. The magic lies in that initial “smash,” which locks in flavor and texture that’s hard to replicate with thicker patties. Often, two thin patties are served together on a bun, with cheese melted deliciously between them, amplifying the flavor and creating a satisfying stack.

Our Black Bean Smash Burgers bring this beloved technique into the realm of vegetarian cuisine. While traditional smash burgers rely on the fat content of beef for their signature crisp, our plant-based version achieves a similar delightful texture using a carefully crafted black bean and quinoa mixture. It’s true they won’t replicate the exact crispness of a beef patty, but the smashing method still helps to create thinner, firmer patties with wonderfully browned exteriors. This approach elevates the humble veggie burger, making it more engaging to cook and even more enjoyable to eat. The combination of textures and robust flavors ensures these vegetarian smash burgers are just as delicious and fun as their carnivorous counterparts, making them a fantastic choice for any burger lover.

Key Ingredients for Your Perfect Black Bean Smash Burger

Crafting the perfect Black Bean Smash Burger starts with selecting quality ingredients that contribute to both flavor and texture. Here’s a detailed look at what you’ll need to create these amazing plant-based patties:

  • Cooked Quinoa: This superfood forms the structural backbone of our veggie burgers. Quinoa adds a fantastic nutty flavor and a pleasing texture that helps bind the patties without making them too dense. You can use either warm or chilled cooked quinoa. For a variation or if you don’t have quinoa on hand, cooked brown rice makes an excellent substitute, offering a similar binding capacity and earthy taste.
  • Black Beans: The star of the show! We use one standard can of black beans, thoroughly rinsed and drained. Rinsing removes excess sodium and starch, ensuring the purest bean flavor. Black beans provide a rich, earthy flavor and a creamy texture when processed. While this recipe specifically calls for black beans, don’t hesitate to experiment with other bean varieties like kidney beans or cannellini beans for a slightly different flavor profile.
  • Bread Crumbs (Panko Preferred): Bread crumbs are crucial for absorbing excess moisture and helping the patties hold their shape, ensuring they don’t fall apart during cooking. Panko breadcrumbs, with their larger, flakier texture, are highly recommended as they contribute to a lighter, crispier exterior. However, regular bread crumbs or even finely crushed crackers work perfectly well if panko isn’t available.
  • Chunky Salsa: This ingredient is a flavor powerhouse! Using a chunky salsa adds a burst of fresh, zesty flavor, along with moisture and texture from vegetables like tomatoes, onions, and peppers. I particularly love using a black bean and corn salsa, as it introduces additional elements and a delightful sweetness that complements the other ingredients beautifully.
  • Aromatic Spices: Flavor is paramount in any burger, and these black bean patties are generously seasoned with a blend of ground cumin, onion powder, garlic powder, and paprika. Cumin adds a warm, earthy depth, while onion and garlic powder infuse savory notes. Paprika contributes a mild sweetness and a hint of smoky flavor, enhancing the overall profile. Feel free to adjust the quantities of these spices to your personal preference for a bolder or milder taste.
  • Cheese: No smash burger is complete without melted cheese! A slice of sharp cheddar cheese is my go-to choice for its robust flavor and excellent melting properties, creating a gooey layer between the patties. You can use as much cheese as you like, or explore other varieties such as Monterey Jack, pepper jack for a kick, or even a vegan cheese alternative to keep the burger entirely plant-based.
  • Hamburger Buns: The vessel for your delicious burger! Choose your favorite hamburger buns – brioche, whole wheat, or classic sesame seed buns all work wonderfully. For a lower-carb or gluten-free option, serving your patties between two crisp lettuce leaves is a refreshing and healthy alternative.
  • Optional Toppings: This is where you can truly make the burger your own! I enjoy topping mine with classic ketchup, fresh lettuce, juicy tomato slices, tangy pickles, and creamy avocado. Other popular options include sliced red onion, mustard, vegan mayo, hot sauce, or even a fried egg if you’re not going strictly vegan. The possibilities are endless, so get creative!

Mastering the Art of Making Black Bean Smash Burgers

Creating these delicious Black Bean Smash Burgers is a straightforward process, but paying attention to each step will ensure perfect results every time. Follow these detailed instructions for a truly satisfying vegetarian burger:

  1. Prepare the Patty Mixture: Begin by combining your cooked quinoa, thoroughly rinsed and drained black beans, bread crumbs (panko for best results), chunky salsa, all your selected spices (cumin, onion powder, garlic powder, paprika), and a pinch of salt into a food processor. Pulse the mixture a few times until it forms a texture that is partly chunky and partly smooth. The goal is a mixture that holds together well without being a completely smooth paste; a paste-like consistency can result in mushier burgers. Ensure there’s still some texture from the beans and quinoa for a more appealing bite.
  2. Form the Patties: Transfer the blended burger mixture from the food processor to a medium-sized bowl. Use your hands or a spoon to mix everything together thoroughly, ensuring all ingredients are well incorporated. At this stage, you have the option to chill the burger mixture in the refrigerator for up to four days, which can make it easier to handle and form patties, or you can proceed immediately. This recipe is designed to yield approximately eight thin patties, which will make four complete two-patty smash burgers.
  3. Cook and Smash: Heat a large skillet or griddle over medium heat. Add a couple of teaspoons of olive oil to the hot pan, ensuring it’s evenly coated. Once the oil is shimmering, carefully place the formed burger patties into the pan. Using a sturdy spatula, firmly press each patty down to achieve that signature “smash burger” thinness. This crucial step helps create crispy edges. Cook each side until it is beautifully browned and has a crispy exterior, which typically takes about 5-7 minutes per side. During the final minute of cooking, place a slice of cheddar cheese (or your preferred cheese) onto four of the cooked patties, allowing it to melt into a gooey perfection.
  4. Assemble Your Burgers: Now comes the exciting part – assembly! Lay the bottom half of a hamburger bun on your serving plate. Pile on any fresh toppings you desire first, such as lettuce, tomato, or pickles. Next, carefully place one of the patties with the melted cheese on top of your chosen toppings. Then, crown it with a second plain burger patty. Add any additional toppings you love on the top patty, and finally, place the second half of the bun on top to complete your magnificent Black Bean Smash Burger. Serve immediately and enjoy the fruits of your labor!

Frequently Asked Questions About Black Bean Veggie Burgers

Here are some common questions about making and enjoying these delicious Black Bean Smash Burgers:

  • Are these veggie burgers gluten-free? The original recipe, as written with regular bread crumbs and standard hamburger buns, is not gluten-free. However, it is incredibly easy to adapt! Simply swap out the regular bread crumbs for a gluten-free alternative (like gluten-free panko or crushed gluten-free crackers) and serve the patties on gluten-free buns or wrapped in large lettuce leaves.
  • Can I make these smash burgers vegan? Absolutely! The black bean and quinoa patty mixture itself is entirely vegan. To make the complete burger vegan, simply use your favorite brand of dairy-free vegan cheese. There are many fantastic vegan cheddar and Monterey Jack style slices available that melt beautifully. Pair them with vegan buns and vegan mayonnaise if desired.
  • What is the ideal texture of the black bean burgers? These patties are designed to be on the softer side internally, offering a tender chew, but they are definitely not dry or crumbly. The goal is a patty that holds together well with a satisfying bite. To achieve a super crispy exterior, which is highly recommended for a “smash” effect, ensure your skillet is hot and use about a tablespoon of olive oil per batch. Press them down firmly and cook until each side develops a deep golden-brown crust.
  • How long do leftovers last in the refrigerator? Both the uncooked black bean burger mixture and cooked patties store well. The raw mixture can be kept in an airtight container in the refrigerator for up to four days. Cooked patties, once cooled, can also be refrigerated for 3-4 days. They reheat wonderfully in a skillet or oven, maintaining much of their original texture.
  • Can I freeze the black bean burger mixture or cooked patties? Yes, these burgers are excellent for meal prepping! The uncooked patty mixture can be frozen for up to three months. Simply thaw it in the refrigerator overnight before forming and cooking. Cooked patties can also be frozen; layer them with parchment paper in an airtight container or freezer bag. Thaw in the fridge and reheat.
  • What if my mixture is too wet or too dry? If your mixture seems too wet and won’t hold its shape, add a tablespoon or two more of bread crumbs until it reaches a manageable consistency. If it’s too dry and crumbly, add a teaspoon of water or a bit more salsa, mixing well until it comes together.

Description

These Black Bean Smash Burgers are the perfect, impressive, veggie burger to serve at all your gatherings this summer! This veggie burger has two thin black bean patties with melted cheese in the middle. Top with your favorite burger toppings and enjoy!

Ingredients

  • 1 1/2 cups cooked quinoa
  • 1 (15 ounce) can black beans, rinsed and drained (or about 1 1/2 cups)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/3 cup chunky salsa
  • 1/3 cup breadcrumbs (panko preferred)
  • Olive oil, for browning burgers
  • 4 hamburger buns
  • 4 slices cheddar cheese
  • Optional toppings (lettuce, tomato, avocado, pickles, ketchup, mustard, etc.)

Instructions

  1. To a food processor, add your cooked quinoa, black beans, bread crumbs, salsa, spices, and salt. Blend until a partly chunky, partly smooth mixture is formed. Ensure it’s not too much of a paste; you want it to hold together well without being mushy.
  2. Add the burger mixture to a medium-sized bowl and mix well. You can chill your burger mixture for up to 4 days, or make your patties right away. This recipe should make enough for about 8 thin patties, making 4 burgers total.
  3. Form the burger mixture into 8 thin patties. Heat a large skillet over medium heat and add a couple teaspoons of olive oil. Once hot, place burger patties into the pan and use a spatula to really press them down (smash them). Cook until each side is browned and crispy, 5-7 minutes per side. Melt a slice of cheese onto 4 of the patties during the last minute of cooking.
  4. Assemble your burgers: Lay down your bottom piece of bun and top with any toppings you desire. Next, carefully place the patty with the melted cheese down and then top with a second burger patty. Top with any other toppings you like and place the second piece of bun on top. Serve immediately.
