Embracing Autumn’s Charm: Pumpkin Patches, Desert Wineries, and Wholesome Tex-Mex Loaded Sweet Potatoes
What a fantastic and fall-filled weekend I experienced recently! It’s quickly become a cherished tradition in our household to embark on an annual pumpkin-picking adventure. Last year, we started this delightful custom, and despite the pumpkin patch being a good hour and a half drive from our Tucson home, the journey is always worth it. There’s something truly special about venturing out, hand-selecting, and cutting our own pumpkins right from the vine. The atmosphere is undeniably part of the magic; we’re always greeted with generous handfuls of irresistible caramel corn as soon as we pull into the parking lot, and the aroma of roasted corn on the cob makes it nearly impossible to pass up. These simple pleasures truly encapsulate the spirit of autumn and make for unforgettable memories.
This year, the weather was a little brisk and overcast, adding a cozy touch to our outing. Despite the chill, we had an absolutely wonderful time, and I believe I found the most perfect pumpkin to adorn our home! The anticipation for pumpkin carving this coming weekend is already building. Who knows, I might even summon enough energy to roast some pumpkin seeds, a delicious snack that always reminds me of childhood falls. Of course, the ultimate motivator will likely be how much Halloween candy I can get my hands on – a little sweet treat always helps with creative energy!

Unexpected Discoveries: From Groupon Adventures to a Desert Vineyard Oasis
When we first relocated to Tucson, I quickly developed an obsession with Groupon. Having never lived in a place where such deals were widely available, I admit my newfound enthusiasm got a little out of hand! I purchased a multitude of vouchers for everything from dining out affordably to exploring new hobbies. One particular Groupon led me to a thrilling glass-blowing class, which was incredibly fun and a truly unique experience. Another proved to be an invaluable investment: a class to learn how to master my DSLR camera shortly after I bought it – that one was absolutely worth every penny!
But perhaps the most surprising and delightful discovery was a Groupon for a wine tasting at a vineyard surprisingly close to our desert home. Living in the Sonoran Desert, you don’t typically imagine lush vineyards just around the corner. Yet, there it was! This particular find, next to my camera class, turned out to be one of the best Groupon purchases I’ve ever made. It offered a wonderful opportunity to explore a local gem we might never have otherwise found, proving that sometimes the best adventures are just a click away.

Our wine tasting experience was truly exceptional. We enjoyed six different wine tastings, a full glass of our favorite, and even got to keep the commemorative glass. To top it off, we received a 10% discount on any bottles we decided to purchase. As much as I adore the pumpkin patch, this vineyard visit was by far the highlight of my day. The view from the vineyard was absolutely breathtaking, showcasing the unique beauty of the desert landscape. It even began to sprinkle lightly while we were there, which only amplified the serene and somewhat mystical atmosphere. Sipping wine amidst such picturesque surroundings, with a gentle rain falling, felt like a scene from a dream.

From the Farm to Your Fork: Inspiring a Delicious Tex-Mex Recipe
Beyond the charming pumpkins, the farm offered a bounty of fresh produce that visitors could pick themselves. As a big fan of peppers, I couldn’t resist loading up on poblano peppers. I have to admit, I’m quite a wimp when it comes to truly spicy peppers, but I can happily devour milder varieties like poblanos as if they were candy! Their mild heat and earthy flavor are simply irresistible, making them a versatile ingredient for countless dishes.

Among the other treasures I discovered were bundles of adorable little sweet potatoes. Naturally, I simply had to buy those too. I’m accustomed to seeing the “dinosaur-sized” sweet potatoes at the grocery store, which I genuinely love for their versatility and robust flavor. However, for some inexplicable reason, I just can’t say no to a miniature version of any vegetable. There’s something incredibly charming about them! I once spotted some mini cauliflower at the store and, thinking I’d devise a recipe, decided to return the next day to purchase them. To my dismay, they were completely sold out, and I still occasionally dream about how utterly cute they were! So, when faced with these small sweet potatoes, I didn’t hesitate to stock up. And that, my friends, is precisely how this delightful recipe for Tex-Mex Loaded Sweet Potatoes was born. While you can certainly use any size sweet potato you prefer, these small ones have quickly become my new favorites for their perfect individual serving size and quick cooking time.

- Total Time: 55 minutes
- Yield: 6 servings
Ingredients
- 6 – 8 small sweet potatoes
- 1 cup dry quinoa
- 2 cups cooked black beans, or 1–15 ounce can
- 3/4 cup diced poblano peppers, about 1 large pepper
- 1/2 small red onion, diced
- 1/4 cup chunky salsa
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon smoked paprika
- salt, to taste
- pepper, to taste
- olive oil
- guacamole for topping, recipe above
- tortilla chips or tortilla strips, for topping
- cilantro leaves, for topping
Instructions
- Pre-heat oven to 425 degrees F (220 degrees C). Pierce sweet potatoes a few times with a fork. Place a sheet of tin foil onto a large sheet pan. Arrange sweet potatoes on the sheet pan and place into the oven. Roast for about 45 minutes, depending on the size of the sweet potatoes, until they are tender enough to be easily pierced with a fork.
- While the sweet potatoes are roasting, prepare the quinoa. Cook according to package directions, typically by combining 1 cup quinoa with 2 cups water or broth, bringing to a boil, then simmering until water is absorbed and quinoa is fluffy.
- Heat a large pan over medium heat and coat it with a small layer of olive oil. Add the diced poblano peppers, red onions, and minced garlic to the pan. Season with a pinch of salt and pepper. Sauté for a few minutes until the onions become translucent and the peppers are softened. Stir in the cooked black beans, prepared quinoa, salsa, ground cumin, paprika, and smoked paprika. Mix everything together thoroughly and continue to cook until heated through and well combined.
- Once the sweet potatoes are roasted, carefully cut a slit down the center of each one and gently squeeze the sides to open them up. Spoon approximately 1/4 to 1/2 cup of the quinoa mixture into each sweet potato, adjusting the amount based on the potato’s size. Finally, top generously with a spoonful of fresh guacamole, a sprinkle of vibrant cilantro leaves, and crunchy tortilla strips for added texture and flavor. Serve immediately and enjoy!
