- 1 cup shredded mozzarella cheese (dairy or non-dairy)
- 1 1/2 – 2 cups quality tomato sauce
- 1/2 cup small diced zucchini
- 1/2 cup small diced red pepper
- 1/2 cup small diced green pepper
- 2 tablespoons small diced red onion
- 1 clove garlic, minced
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- Red pepper flakes, to taste (for a little kick)
- Olive oil
- Salt and freshly ground black pepper, to taste
- Fresh basil leaves for garnish, if desired
Almond Ricotta Recipe (Dairy-Free Option):
- 1 cup slivered almonds, soaked in water overnight or for at least 6 hours
- 1/2 cup water
- Instructions: Place the soaked almonds in a food processor with 1/2 cup of fresh water. Blend for 1-2 minutes until a wonderfully creamy, ricotta-like texture is achieved. Scrape down the sides as needed.
Instructions
Follow these simple steps to create your delicious and perfectly portioned vegetable lasagna roll-ups:
- Preheat your oven to 375 degrees F (190 degrees C).
- Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package directions until al dente. Drain thoroughly and lay them out individually on a sheet pan lined with parchment paper to prevent sticking.
- While the noodles are cooking, heat a large skillet over medium heat. Coat the bottom with a small amount of olive oil. Add all of the diced zucchini, red pepper, green pepper, and red onion to the pan. Season generously with salt and pepper. Sauté for a few minutes until the vegetables begin to soften.
- Add the minced garlic, dried oregano, dried thyme, and red pepper flakes to the skillet. Continue to cook for another 2-3 minutes, stirring occasionally, until the garlic is fragrant and the vegetables are tender-crisp. Remove from heat.
- Assemble the roll-ups: Pour about 1 cup of tomato sauce into the bottom of an 8-inch baking dish, spreading it evenly. Take one lasagna noodle and spread approximately two and a half tablespoons of ricotta cheese evenly over its surface. Top this with a spoonful of the sautéed vegetable mixture. Sprinkle with 1-2 tablespoons of shredded mozzarella cheese. Carefully roll the lasagna noodle tightly, starting from one end.
- Place the rolled lasagna noodle, seam-side down, in the prepared baking dish. Repeat this process with the remaining noodles, filling, and cheese until all six roll-ups are assembled and arranged snugly in the dish.
- Once all the roll-ups are in place, pour the remaining 1 cup of tomato sauce evenly over them and sprinkle with the rest of the shredded mozzarella cheese.
