  • 1 handful cilantro leaves

  • Squeeze of lemon (optional, for kale massage)

Sesame Ginger Dressing:

  • 1/2 cup olive oil
  • 3 tablespoons rice wine vinegar
  • 2 teaspoons maple syrup
  • 2 teaspoons tamari (gluten-free if necessary)
  • 1 teaspoon toasted sesame seeds
  • 1/2 teaspoon toasted sesame oil
  • 1/4 teaspoon grated fresh ginger

  2. Wash the kale, remove the ribs from the leaves, and chop the leaves into bite-sized pieces. Place the kale in a large bowl and drizzle with a small amount of olive oil, a pinch of salt, and an optional squeeze of lemon. Massage the kale leaves with your hands for about 1 minute until slightly softened.
  3. Add the cooked quinoa to the massaged kale, along with the drained garbanzo beans, sliced red pepper, shredded carrot, julienned radishes, chopped scallions, chopped cashews, and cilantro leaves. Mix all ingredients thoroughly until well combined.
  4. Chop the baked tofu into bite-sized pieces. You can either add the tofu to the large salad bowl and mix it in, or keep it separate to top individual servings. If eating the entire salad at once, pour the dressing over the salad and mix well. For meal prep, keep the dressing separate and dress individual portions as needed to prevent sogginess. The salad will keep well in the refrigerator for up to 4 days.
