Clearly, stomach issues are indeed a widespread modern ailment!

Adding to the day’s charming itinerary, I had, for some inexplicable reason, also scheduled an oil change for the same afternoon. So, fresh from the doctor’s office, I headed directly to the automotive center, a place infamous for its notoriously long wait times. The one saving grace? It’s conveniently located at the mall. So, with time to kill, I ventured into Old Navy and emerged victorious with some absolutely adorable new shirts. Every cloud, as they say, has a silver lining, even if that silver lining comes in the form of retail therapy after a day of sheer exasperation.

Ingredients

  • 1 – 15 oz can chickpeas, thoroughly rinsed and drained
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon Old Bay seasoning
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon celery salt
  • 1/4 teaspoon paprika
  • 1/2 teaspoon nutritional yeast, for a cheesy, savory depth
  • 1/2 teaspoon dried thyme
  • A few dashes of Tabasco sauce (adjust to your spice preference)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Olive oil, for roasting and pan-frying
  • 1 cup bread crumbs (use gluten-free if necessary)
  • 6 hamburger buns, or lettuce wraps for a lighter option
  • Optional toppings: fresh lettuce, ripe tomato slices, thinly sliced red onion, vegan mayo, mustard, ketchup, or your favorite sauces.

Instructions

  1. Prepare the Sweet Potatoes: Begin by pre-heating your oven to 400 degrees F (200 degrees C). Spread the diced white sweet potatoes evenly onto a large baking sheet. Drizzle them generously with olive oil and season with salt and freshly ground black pepper. Toss gently to ensure all pieces are lightly coated. Place the seasoned sweet potatoes in the preheated oven and roast for approximately 25 minutes, or until they are tender when pierced with a fork and slightly caramelized. Once roasted, remove from the oven and allow them to cool for about ten minutes – this is important for the patty texture.
  2. Blend the Patty Mixture: In the bowl of a food processor, combine the cooked brown rice, rinsed and drained chickpeas, the cooled roasted white sweet potatoes, and all of your chosen spices (garlic powder, onion powder, Old Bay seasoning, dried oregano, celery salt, paprika, nutritional yeast, dried thyme, and Tabasco sauce). Pulse the food processor until all ingredients are thoroughly combined and the mixture forms a cohesive, slightly chunky paste. Be careful not to over-process, as the sweet potatoes can cause the mixture to become too gummy if blended for too long. A little texture is desirable!
  3. Form and Coat the Patties: Pour the bread crumbs onto a large, flat plate. Take portions of the patty mixture and form them into six uniform patties, about 1-inch thick. Gently place each patty into the bread crumb mixture, pressing down lightly to ensure the breadcrumbs adhere well. Flip the patty and coat the other side, then press the edges into the breadcrumbs to ensure all sides are evenly covered. This creates a beautiful, crispy crust when cooked.
  4. Pan-Fry the Patties: Heat a large skillet over medium heat. Add a generous drizzle of olive oil, enough to lightly coat the bottom of the pan. Allow the olive oil to get hot before carefully placing the breaded patties into the skillet. Cook the patties for approximately 3 minutes on each side, or until they are beautifully golden brown and crispy. Work in batches if necessary to avoid overcrowding the pan, which can lower the temperature and prevent proper browning.
  5. Assemble and Serve: Once all the vegan “chicken” patties are cooked, place them onto your chosen hamburger buns (or lettuce wraps).
