My Vegetarian Superfood Wraps are packed with all my favorite superfood ingredients, including: avocado, kale, quinoa, dates, and sunflower seeds. Prepare the filling ahead of time and make a fresh wrap each morning for a healthy lunch.

Ingredients

  • 4-6 large wraps (spinach, whole wheat, or gluten-free)
  • 1 1/4 cups cooked quinoa (tri-colored or white)
  • 2 cups chopped curly kale leaves (finely chopped)
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/3 cup chopped Medjool dates
  • 1/3 cup chopped walnuts or sunflower seeds
  • 1/4 cup chopped red onion
  • 1-2 cups hummus, plain or flavored (about 1/4 cup per wrap)
