  • 4 cups old fashioned oats, gluten free certified if necessary
  • 1/4 cup coconut sugar or brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 1/3 cup unsweetened almond milk
  • 2 teaspoons vanilla extract
  • 1/4 cup pure maple syrup
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons lemon zest, or more if you like!
  • 1 1/2 cups chopped raspberries, you could use fresh or frozen

Instructions

  1. Pre-heat oven to 375 degrees F (190°C). Add all dry ingredients (oats, coconut sugar/brown sugar, cinnamon, baking powder, salt) to a large bowl and mix thoroughly until combined. In a separate bowl, whisk together the wet ingredients (almond milk, vanilla extract, maple syrup, fresh lemon juice, lemon zest). Pour the wet ingredients into the dry ingredients and mix well until everything is fully incorporated. Gently fold in 1 cup of the chopped raspberries, reserving the remaining 1/2 cup for topping.
  2. Lightly spray a 9×13 inch baking pan with cooking spray. Pour the oatmeal mixture into the prepared baking pan. Use a spatula to smooth out the top evenly. Arrange the reserved 1/2 cup of raspberries on top of the oatmeal mixture for a beautiful presentation. Place the pan in the pre-heated oven.
  3. Bake the oatmeal for approximately 30-35 minutes, or until it’s cooked through, mostly firm to the touch, and the edges are lightly golden. An inserted toothpick should come out mostly clean. If making individual cups, bake for 20-25 minutes. Let the baked oatmeal cool in the pan for 10-15 minutes before slicing and serving. This allows it to set properly and makes for cleaner cuts.

I store my baked oatmeal in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze in an airtight container for up to 3 months.

I enjoy eating mine cold, but if you want you can re-heat in the microwave for about 45-60 seconds, or re-heat in a 375 degree F (190°C) oven for about 10-15 minutes.
