- 1 cup dried quinoa
- 2 cups roasted red pepper enchilada sauce, or sauce of your choice
- 1 (15 ounce) can black beans, drained and rinsed
- 8.5 ounces canned corn, or frozen or fresh
- 1/2 cup roasted green chilies, diced
- 1 1/2 cup shredded cheese, divided (Monterrey jack recommended)
- 2 tablespoons salsa, your favorite kind
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt to taste
Instructions
- Rinse 1 cup of dried quinoa thoroughly and place it in a medium-sized saucepan with two cups of water. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pan and let it simmer for approximately 20 minutes, or until all the water has been absorbed and the quinoa is light and fluffy.
