Nourish Your Body with This Healthy Herbed Dressing

Beyond its incredible taste, this Herbed Yogurt Dressing offers a wealth of health benefits, making it a smart and delicious choice for a wholesome diet:

  • The Power of Fresh Herbs: Herbs are much more than just flavor enhancers; they are potent powerhouses of nutrition, revered for centuries in traditional medicine for their healing properties. Each herb boasts a unique profile of vitamins, minerals, and antioxidants. For instance, the parsley in this dressing is rich in Vitamin K, essential for bone health, and Vitamin C, a powerful antioxidant. Cilantro is known for its detoxifying properties and its high content of Vitamin A and K. Mint not only freshens breath but also aids in digestion and can soothe an upset stomach. Green onions provide a good source of Vitamin K and Vitamin C. Incorporating fresh herbs into your diet, like in this dressing, is an excellent way to boost your intake of these beneficial compounds, supporting overall wellness and vitality.
  • The Goodness of Greek Yogurt: The foundation of this dressing, plain, non-fat Greek yogurt, is a nutritional champion. It’s famously high in protein, which helps keep you feeling full and satisfied, making it an excellent choice for weight management. Rich in calcium, it supports strong bones and teeth, while its Vitamin B content, particularly B12, is crucial for nerve function and energy production. Greek yogurt is also a fantastic source of probiotics – beneficial bacteria that promote a healthy gut microbiome, which in turn can boost immunity and improve digestion. Unlike many dairy products, Greek yogurt is typically low in cholesterol and saturated fat, offering a heart-healthy way to enjoy dairy and reap its numerous nutritional rewards. Opting for plain Greek yogurt also means avoiding added sugars and artificial flavors often found in flavored varieties, ensuring your dressing is as clean and wholesome as possible.

Essential Ingredients for Your Herbed Yogurt Dressing

Crafting this flavorful dressing requires a selection of fresh, high-quality ingredients. Here’s a detailed look at what you’ll need and why each component is important:

  • Yogurt: The star of our dressing! I highly recommend using plain, non-fat Greek yogurt for its wonderfully thick, creamy texture and tangy flavor profile. Its richness provides an excellent base that holds up well with the strong herb flavors. However, if Greek yogurt isn’t your preference, regular plain yogurt can also be used, though you might need to slightly reduce the amount of other liquids to achieve your desired consistency, as regular yogurt is typically thinner. For those following a plant-based diet, any plain, unsweetened non-dairy yogurt (such as almond, soy, or oat-based) will work beautifully, offering a delicious vegan alternative without compromising on creaminess.
  • Olive Oil: Extra Virgin Olive Oil (EVOO) is my oil of choice for this recipe. Its fruity, slightly peppery notes add a delightful richness and depth to the dressing. Beyond flavor, it also helps to emulsify the dressing and achieve a smoother, more pourable consistency. If you prefer a noticeably thicker dressing, you can certainly reduce the amount of olive oil or even omit it entirely. Feel free to adjust based on your personal preference for texture.
  • Fresh Lemon Juice: A squeeze of fresh lemon juice is essential for its bright, tart, and uplifting acidity. It perfectly complements the fresh herbs, awakening their flavors and providing a refreshing zing that balances the creaminess of the yogurt. For an even more intense citrus punch and a lovely aroma, consider adding a touch of lemon zest along with the juice. Always opt for fresh lemon juice over bottled for the best flavor.
  • White Vinegar: Adding white distilled vinegar alongside the lemon juice introduces another layer of bright acidity, but with a distinct tang that differs from lemon. This combination of two acidic components creates a more complex and well-rounded flavor profile for the dressing. While white vinegar is my preferred choice for its clean taste, you can experiment with other light-colored vinegars like apple cider vinegar. However, I would advise against using balsamic vinegar, as its strong, dark flavor would likely overpower the delicate herbs.
  • Garlic: Fresh garlic is a must for its pungent, aromatic kick that beautifully enhances the overall savory notes of the dressing. I typically use one large clove, finely minced, for a robust flavor. If you prefer a milder garlic presence, you can either reduce the amount of fresh garlic or substitute it with a half teaspoon of garlic powder, which offers a mellower taste.
  • Maple Syrup: A small amount of pure maple syrup is added to introduce a touch of natural sweetness. This sweetness isn’t meant to make the dressing dessert-like, but rather to act as a crucial counterpoint, balancing the tartness of the lemon and vinegar and softening the strong flavors of the herbs and garlic. If maple syrup isn’t available or preferred, an equal amount of honey makes an excellent substitute.
  • Fresh Herbs: This is where the “herbed” in Herbed Yogurt Dressing comes to life! My go-to combination includes fresh cilantro, Italian parsley, refreshing mint, and crisp green onion. This blend offers a fantastic mix of peppery, citrusy, and cooling notes. However, this recipe is incredibly forgiving and encourages customization. Feel free to use your favorite fresh herbs or whatever you have on hand. Wonderful additions include fresh dill for a slightly anisy flavor, basil for a sweet and peppery touch, or even tarragon for its unique licorice-like essence. Don’t be afraid to experiment and create your signature herb blend!
  • Salt + Black Pepper: These foundational seasonings are vital for enhancing all the other flavors. Use fine sea salt or kosher salt, and freshly ground black pepper for the best taste. Adjust to your personal preference.

How To Craft Your Own Delicious Herby Greek Yogurt Dressing

Making this vibrant Herbed Greek Yogurt Dressing is incredibly straightforward, requiring just a few simple steps. You’ll be amazed at how quickly you can create such a flavorful addition to your meals:

  1. Gather and Combine All Ingredients: Begin by adding all the core dressing ingredients – that’s your plain Greek yogurt, fresh lemon juice, white vinegar, garlic, maple syrup, an abundant mix of fresh herbs (cilantro, parsley, mint, green onion), salt, and black pepper – into the pitcher of a high-speed blender or the bowl of a food processor. For this specific amount of dressing, I found a personal-sized blender, like the Ninja, to be perfectly suited for efficiently blending everything without any fuss. Ensure all ingredients are roughly chopped if necessary, to help them blend smoothly.
  2. Blend to Perfection and Adjust as Needed: Secure the lid on your blender or food processor and begin to blend the ingredients. Start on a low speed, gradually increasing to high until all components are thoroughly combined and the dressing achieves a wonderfully smooth and creamy consistency. As it blends, you might find the dressing to be quite thick, which is perfect if you prefer a dip-like texture. For a more pourable salad dressing consistency, slowly drizzle in extra virgin olive oil through the lid’s opening while the blender is running, until your desired texture is reached. Remember to pause and scrape down the sides of the blender with a spatula if any ingredients cling to the edges. Once blended, give the dressing a taste. This is your moment to customize! Feel free to add more salt, a dash more lemon for brightness, or another drizzle of maple syrup for added sweetness, until the flavor profile is perfectly to your liking.
  3. Store and Enjoy: Once your Herbed Yogurt Dressing is blended to perfection, transfer it into an airtight container. A glass jar with a tight-fitting lid works wonderfully. Store it promptly in the refrigerator, where it will maintain its freshness and vibrant flavor for up to one week. This makes it an ideal condiment for meal prepping, ensuring you have a healthy and delicious option ready for salads, sandwiches, wraps, pasta, and so much more throughout the week. Give it a quick stir before each use to re-incorporate any separated ingredients.

  • What if my dressing is too thick or too thin? The consistency of your dressing is easily adjustable! If it’s too thick, simply whisk in a teaspoon or two of water, milk (dairy or non-dairy), or a little extra olive oil until it reaches your desired pourable consistency. Description

This vibrant Herbed Yogurt Dressing is quick to prepare and loaded with fresh flavor. Using a base of plain Greek yogurt, it incorporates a medley of fresh herbs like parsley, cilantro, and mint. This versatile homemade dressing keeps well in the refrigerator for about one week and is perfect for enhancing salads, wraps, pasta dishes, sandwiches, fresh vegetables, and much more.

Ingredients

Scale

  • 16 oz plain, non-fat greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon white distilled vinegar
  • 12 cloves fresh garlic
  • 1/2 cup fresh parsley, I used Italian parsley
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup chopped scallions, both the white and green parts
  • 1/2 teaspoon pure maple syrup, or honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Extra virgin olive oil, as much as need to thin out the sauce.  I used 1 tablespoon.

Instructions

  1. Add all of the dressing ingredients to a blender, or food processor.  I used the ninja blender and it was the perfect size for this amount of dressing.
  2. Blend until all the ingredients are blended together and dressing is smooth.  Drizzle in as much olive oil as need to thin the dressing out to desired texture.  Give it a taste and adjust ingredient amounts as needed.  Store dressing in an air-tight container, in the refrigerator for up to a week.  Add to salads, sandwiches, wraps, pasta and more.

Notes

If you prefer a thicker dressing, you can leave out the olive oil.  I like to blend everything together and then slowly drizzle in the olive oil until my desired consistency of dressing is reached.
