  • 1 cup vegan queso fresco (or regular, if not vegan)
  • 1 cup corn kernels (thawed if frozen, fresh is great)
  • 1 medium sized tomato, diced
  • 1 large avocado, diced (add just before serving)
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • Chopped jalapeño, to taste (pickled or fresh)
  • 46 pieces of pita bread (use gluten-free if preferred)

For the Cumin Lime Vinaigrette

  • 1/3 cup extra virgin olive oil
  • 1/4 cup fresh lime juice (from about 2-3 limes)
  • 1/21 teaspoon ground cumin
  • 1-2 cloves fresh garlic, grated or finely minced
  • 1 teaspoon Dijon mustard
  • 2 teaspoons pure maple syrup (or honey for non-vegans)
  • Salt and freshly ground black pepper, to taste
