Hello, wonderful readers! I must sincerely apologize for my recent quietness. Life has been a whirlwind as my husband and I prepare for a big move. We’ve been incredibly busy getting our house ready to sell and embarking on an exciting new adventure: house hunting in beautiful Santa Fe, New Mexico! It’s been a demanding period, juggling packing, cleaning, and property viewings with a spirited toddler and our beloved cat, which leaves little time for much else. The daily routine of ensuring our home is spotless for potential buyers is quite the marathon, but we’re thrilled to share that my husband secured a new job in Santa Fe, and our move is slated for sometime in August.
While the thought of leaving our cherished friends and the familiar comforts of Tucson brings a pang of sadness, there’s also an undeniable excitement brewing for what lies ahead. I’m particularly looking forward to experiencing all four distinct seasons again, a delightful change from the desert climate. The process of tying up all these loose ends has certainly kept me on my toes, but amidst the chaos, I finally carved out some time to share this fantastic recipe that has been a lifesaver for us: these incredible Sweet Potato and Chickpea Tacos with Lemony Kale Slaw. Trust me, they’re worth the wait!

Key Ingredients for Your Sweet Potato and Chickpea Tacos with Lemony Kale Slaw
Crafting these delectable vegan tacos requires a few simple yet impactful ingredients. Each component plays a vital role in building the robust flavor and satisfying texture of the final dish.
For the Roasted Sweet Potatoes and Chickpeas:
- Sweet Potatoes: Diced into small, uniform pieces for even roasting, they become wonderfully tender and slightly caramelized, providing a natural sweetness and creamy texture.
- Chickpeas: Canned chickpeas, rinsed and drained, add a fantastic source of protein and fiber. When roasted alongside the sweet potatoes, they develop a delightful slightly crispy exterior.
- Olive Oil: Essential for coating the vegetables and chickpeas, helping them crisp up and ensuring the spices adhere beautifully.
- Spices: This is where the magic happens! I use a blend of:
- Salt: Enhances all the flavors.
- Ground Cumin: Adds an earthy, warm, and slightly pungent note, quintessential to many taco seasonings.
- Chili Powder: Provides a mild warmth and depth of flavor without being overly spicy.
- Garlic Powder: Offers a savory aromatic foundation that ties all the flavors together.
For the Fresh Lemony Kale Slaw:
- Chiffonaded Kale: Thinly sliced kale provides the hearty green base for the slaw. Its slightly bitter notes are perfectly balanced by the dressing.
- Red Onion: A small handful of thinly sliced red onion adds a sharp, pungent bite and a beautiful pop of color to the slaw.
- Tahini: This creamy sesame paste forms the rich, nutty base of the dressing, adding a wonderful depth and smooth texture.
- Fresh Lemon Juice: The star of the slaw! Freshly squeezed lemon juice brings a bright, zesty acidity that cuts through the richness of the tahini and tenderizes the kale, making it incredibly refreshing.
- Water: Used to thin out the tahini dressing to achieve the perfect pourable consistency.
- Salt: Seasons the slaw and balances the flavors in the dressing.
For Assembly and Topping:
- Corn Tortillas: The ideal vessel for these tacos. Warming them slightly before assembly makes them pliable and enhances their flavor.
- Optional Taco Toppings: Customize your tacos to your heart’s content! Some fantastic additions include:
- Avocado or Guacamole: Adds a creamy, rich texture.
- Salsa: For an extra layer of freshness and tang.
- Hot Sauce: If you love a little extra kick!
- Jalapeños: Fresh or pickled, for heat and crunch.
- Cilantro: A sprinkle of fresh cilantro brightens up the entire dish.
- Vegan Sour Cream or Cashew Cream: For added creaminess.
- Pickled Red Onions: A tangier, milder alternative to fresh red onion.
How to Make These Sweet Potato and Chickpea Tacos: A Step-by-Step Guide
Creating these flavorful vegan tacos is simpler than you might think. Follow these easy steps to bring this healthy and satisfying meal to your table.
- Prepare the Roasted Filling: Begin by preheating your oven to 400 degrees F (200 degrees C). On a large sheet pan, combine the diced sweet potato and rinsed chickpeas. Drizzle with olive oil, then sprinkle generously with salt, ground cumin, chili powder, and garlic powder. Toss everything together until the sweet potatoes and chickpeas are evenly coated with the oil and spices. Spread them in a single layer on the pan to ensure even roasting. Bake for 30-40 minutes, or until the sweet potato is fork-tender and the chickpeas are slightly crispy.
- Whip Up the Lemony Kale Slaw: While the sweet potatoes and chickpeas are roasting, prepare your refreshing kale slaw. In a small bowl or jar, whisk together the tahini, fresh lemon juice, and a pinch of salt. Gradually add water, a tablespoon at a time, whisking continuously until you reach your desired dressing consistency – it should be pourable but still creamy. In a medium bowl, add the chiffonaded kale and thinly sliced red onion. Pour the desired amount of tahini dressing over the kale and red onion. Gently toss the kale with the dressing until all the leaves are well coated. Allow the slaw to sit for a few minutes; the lemon juice in the dressing will help tenderize the kale.
- Assemble Your Tacos: Once the sweet potato and chickpea mixture is perfectly roasted and the kale slaw is ready, it’s time to assemble your delicious tacos! Warm your corn tortillas according to package directions – a dry skillet, microwave, or oven works well. For each taco, spoon about 1/3 cup of the warm sweet potato and chickpea mixture onto the center of a tortilla. Top with a small handful of the vibrant lemony kale slaw. Now comes the fun part: add any additional taco toppings you desire, such as avocado slices, a dollop of salsa, a dash of hot sauce, or a sprinkle of fresh cilantro. Serve immediately and enjoy the burst of flavors and textures!

Tips for the Perfect Vegan Tacos
- Uniform Dicing: Ensure your sweet potatoes are diced into roughly the same size to promote even cooking. This prevents some pieces from being undercooked while others are overly soft.
- Don’t Overcrowd the Pan: When roasting the sweet potatoes and chickpeas, spread them in a single layer on the baking sheet. If the pan is too crowded, the vegetables will steam instead of roast, leading to a less crispy texture. Use two pans if necessary.
- Adjust the Slaw Consistency: The amount of water needed for the tahini dressing can vary. Start with a small amount and add more gradually until you achieve a consistency that coats the kale well but isn’t too thick or too thin.
- Tenderize the Kale: Massaging the kale gently with a bit of olive oil or allowing it to sit in the dressing for 5-10 minutes can help tenderize it, making it less fibrous and more enjoyable.
- Warm Tortillas: Don’t skip warming your corn tortillas! It makes them more pliable, preventing them from breaking, and enhances their flavor and aroma significantly.
- Meal Prep Friendly: The roasted sweet potato and chickpea mixture, as well as the kale slaw (without the dressing fully mixed in, keep dressing separate until serving), can be prepared ahead of time, making these tacos an excellent option for meal prepping throughout the week. Store components separately in airtight containers in the refrigerator.
Variations and Customizations
While this recipe is fantastic as is, feel free to get creative and tailor these Sweet Potato and Chickpea Tacos to your personal taste!
- Spice Level: If you love heat, add a pinch of cayenne pepper or a dash of your favorite hot sauce to the sweet potato and chickpea mixture before roasting.
- Different Greens for Slaw: If kale isn’t your favorite, feel free to substitute it with thinly shredded cabbage, collard greens, or even a mix of leafy greens.
- Add Grains: For an even heartier meal, add a layer of cooked quinoa or brown rice to your tacos before adding the filling.
- Roasted Veggies: Incorporate other quick-roasting vegetables like bell peppers, zucchini, or red onion alongside the sweet potatoes and chickpeas for extra flavor and nutrients.
- Nut-Free Option: If you have a tahini allergy, you can make a similar creamy dressing using a sunflower seed butter or a cashew cream base.
- Swap Tortillas: While corn tortillas are recommended for a gluten-free option and authentic flavor, you can use flour tortillas if preferred.
