And while my dessert repertoire might not be endless, I certainly know a truly exceptional sweet treat when I taste one – and trust me, I’ve tasted plenty! This recipe for **Vegan Lime Cheesecake Parfaits with Coconut Whipped Cream** is an absolute game-changer, delivering vibrant flavor and a wonderfully creamy texture that’s entirely dairy-free and gluten-free.
As summer gently begins to fade, there’s always that bittersweet realization that I haven’t quite managed to make all the amazing seasonal recipes I had planned. The abundance of fresh, ripe fruits seems to be reaching its peak, and I find myself longing to utilize every last cherry tomato and tender summer squash before they disappear. Excuse me for a moment while I indulge in a handful of those juicy cherry tomatoes right now – nature’s candy!

Isn’t it fascinating how our bodies and minds instinctively start to crave foods that align with the current season? It’s a primal connection, perhaps rooted in ancient wisdom or simply influenced by the weather and holidays. During the sweltering heat of summer, when temperatures soar, all we yearn for are light, cooling dishes like crisp salads and icy popsicles. But as autumn approaches, our thoughts naturally turn to comforting, warming ingredients like cranberries, pumpkin pie, and roasted Brussels sprouts, perfectly suited for the cozy holiday season ahead. This seasonal programming makes perfect sense, ensuring we consume the freshest and most nutrient-rich produce available at any given time.

Regardless of the underlying reason, I find myself almost exclusively craving salads during the peak of summer, and then yearning for hearty, warm comfort foods like sweet potatoes once the chill of winter sets in. Although, if you’re a regular reader of my blog, you’ll probably know that my love for sweet potatoes is a year-round affair – I crave them almost every single day! On a lighter note, I’ve been writing the word “rotates” quite a lot for work recently, and funnily enough, every time I try to spell it, my fingers type “rotatoes.” I guess my brain is simply fixated on potatoes! It must be the anticipation of crisp fall weather just around the corner, bringing with it all those delightful root vegetable recipes.

But enough about my potato-induced spelling mishaps! Let’s get back to what truly matters right now: sensational summer desserts. When it comes to warm weather treats, I’m always on the hunt for something incredibly refreshing, light, and often, something with a pop of vibrant color. And while it doesn’t *always* have to be green, a bright, cheerful hue definitely makes it more exciting to eat. The dazzling green shade of these parfaits is actually my favorite feature, and for two excellent reasons:
- Green food just has a certain cool factor – it feels fresh and lively.
- There’s a fantastic secret ingredient hidden in these parfaits that gives them their stunning verdant color, and no, it’s certainly not artificial food coloring! In fact, you could call it nature’s very own food coloring, packed with goodness. Can you guess what it is?
When I first envisioned these parfaits, I pictured a dessert with an intense, bright lime flavor and an equally vivid green color. I quickly realized that simply using lime juice and zest wouldn’t achieve the brilliant hue I was after. So, I took a brilliant cue from my amazing friend Allison at Clean Wellness (you should definitely check out her Ethereal Pistachio Mousse recipe!) and added a generous handful of fresh spinach!

The spinach worked like absolute magic! Not only did it impart that gorgeous, natural green color I was dreaming of, but it also delivered a wonderful healthy boost to the dessert without altering the delicious lime flavor one bit. I am overjoyed to report that even my husband, a discerning dessert critic, absolutely adored these parfaits. When he came home from work, I practically forced a big bite on him, eager for his honest opinion. He looked a little skeptical at first, but like the dutiful husband he is, he complied. I felt a bit like my friend Annie over at Maebells, who brilliantly tricked her husband into eating corn muffins that stealthily contained three whole squash! After he happily declared how much he liked them, I nearly squealed with delight when I revealed that they contained a cup and a half of spinach and were completely dairy-free! I truly hope you’ll experience that same squeal of joy when you try these incredible parfaits too.

Rated 5 out of 5 stars by 2 reviewers
Yield: 4-6 servings
Ingredients
- 2 1/2 cups raw, unsalted cashews, soaked in water overnight (or for at least 4 hours, then drained and rinsed)
- 1/3 cup fresh lime juice (from approximately 3 limes)
- 2/3 cup almond milk, or your preferred unsweetened non-dairy milk
- 1 tablespoon lime zest (from 2-3 limes)
- 1 tablespoon pure maple syrup
- 1 tablespoon coconut sugar or light brown sugar
- 1 1/2 cups packed spinach leaves (the secret to vibrant green color and added nutrients!)
- 1 pinch of salt
- One 5-6 ounce package of graham crackers or your favorite cookie, gluten-free or regular, for layering
Coconut Whipped Cream:
- 2 cans of full-fat coconut cream, chilled overnight in the refrigerator
- Pure maple syrup, to taste
- Coconut or brown sugar, to taste
Instructions
- In a food processor or a high-speed blender, fitted with a metal blade, combine the thoroughly drained and rinsed soaked cashews, fresh lime juice, and almond milk. Blend for 1-2 minutes until smooth and creamy.
- Next, add in the lime zest, maple syrup, coconut sugar, and salt. Continue to blend for about 1 minute, ensuring all ingredients are well incorporated and the mixture is sweetened to your liking.
- Finally, add the packed spinach leaves to the mixture. Blend for an additional 2-3 minutes, or until the spinach is completely pulverized, and you have a beautiful, uniformly green, creamy mixture with no visible spinach flecks. Scoop this vibrant mixture into a bowl and refrigerate for 30 minutes to 1 hour; this optional step helps the mixture firm up slightly, making it easier to layer.
- To prepare the coconut whipped cream, carefully remove the chilled cans of coconut cream from the refrigerator and turn them upside down. Open the cans and pour out any clear liquid (this is the coconut water, which you can save for smoothies!). Scoop the remaining thick, creamy coconut solids into a large mixing bowl.
- Using an electric mixer, whip the coconut cream on high speed for about 1 minute until it becomes light, fluffy, and resembles traditional whipped cream with stiff peaks. Add maple syrup and coconut or brown sugar to taste, then mix for another 30 seconds to combine thoroughly.
- Place the graham crackers or your chosen cookies into a medium-sized bowl. Use the bottom of a sturdy cup or a rolling pin to crush them into fine crumbs.
- To assemble the parfaits, take your mason jars, individual bowls, or clear dessert glasses. Begin by layering the creamy lime cashew mixture, followed by a layer of crushed cookies, and then a generous dollop of coconut whipped cream. Repeat the layers in any order you desire, creating as many or as few as you like, making sure to end with a beautiful swirl of coconut whipped cream. Serve immediately and enjoy the refreshing, dairy-free, and gluten-free goodness!
