  • 1 cup enchilada sauce
  • 2 corn tortillas, chopped up into small pieces
  • 1/2 cup grated cheese (optional, or use dairy-free alternative for vegan)
  • Optional toppings: avocado, onion, tomato, cilantro, salsa, etc.
