Prepare to be amazed, because this recipe for Vegan Chili Cheese Fries is an absolute game-changer! I’ve got to confess a little secret: my husband took just one bite of these incredible fries and immediately declared them one of the best things I’ve ever whipped up in the kitchen. That high praise truly warmed my heart, even though a part of me secretly wanted to devour the entire pan myself! His reaction, however, made me absolutely certain that you, too, are going to fall head over heels for this dish. It’s a comforting, satisfying, and surprisingly wholesome take on a classic favorite that will leave everyone wanting more.
The Journey to the Ultimate Vegan Chili Cheese Fries
Do you recall that incredibly creamy and luscious Butternut Squash Mac & “Cheese” I shared a few weeks ago? Well, I was so utterly smitten with that velvety “cheese” sauce that I simply had to find another magnificent way to incorporate it into my cooking. Its rich flavor and silky texture are just too good to be a one-hit wonder! And with football season seemingly stretching on indefinitely (seriously, when did every night become game night?!), I figured it was the perfect excuse to create the ultimate game-day snack – one that’s both indulgent and entirely plant-based. Enter these sensational Vegan Chili Cheese Fries, a dish that transforms simple ingredients into an extraordinary culinary experience.
What I truly adore about this recipe is the incredible feeling of pure indulgence, almost like I’m getting away with something truly decadent. These chili cheese fries explode with flavor, offering all the savory satisfaction you’d expect from their traditional counterparts. Yet, they come without the heavy oil and excessive grease often found in a basket of pub-style chili cheese fries. Imagine savoring every bite of a hearty, cheesy, and deeply flavorful dish, knowing that you’re nourishing your body with wholesome ingredients. You can actually feel fantastic about yourself after enjoying a generous serving, making them the perfect guilt-free treat for any occasion.

The Foundation: Perfect Homemade Oven-Baked Fries
My journey to perfect fries began several years ago, and once I started making my own oven-baked French fries, I never looked back at the frozen aisle. Homemade fries are, hands down, infinitely superior in taste and texture. The beauty of making them from scratch lies in the endless possibilities for customization. You can experiment with various spices and seasonings to match your mood or meal. Achieving that ideal crispy exterior and fluffy interior is simpler than you might think. All it takes is a humble russet potato, cut into classic French fry shapes, tossed with a little olive oil, salt, and pepper, then baked in a 400-degree F oven for approximately 25 to 30 minutes. The result is a batch of golden, perfectly seasoned fries that form the ideal canvas for our sensational vegan chili and cheese sauce.
While it might be tempting to opt for frozen French fries and canned chili to streamline the process, I wholeheartedly encourage you to invest a little extra time in preparing these components from scratch. The effort of cutting your own potatoes and simmering a homemade chili truly elevates this dish to an unparalleled level of deliciousness. The difference in flavor, texture, and overall satisfaction is monumental. Trust me on this one – you will not regret it. In fact, if you’re anything like my husband, you’ll find yourself proclaiming these vegan chili cheese fries to be one of the best culinary creations you’ve ever embarked upon, and perhaps, one of the best things you’ve ever tasted!

Crafting the Ultimate Vegan Chili for Your Fries
The chili component of this dish is just as crucial as the fries and the cheese sauce. A truly great chili brings a depth of flavor and a comforting warmth that ties everything together. My recipe features a hearty blend of beans – I personally love a mix of kidney and pinto for varied texture and robust flavor, but feel free to use your favorite. The magic truly happens with the aromatic base of diced red onion and fresh minced garlic, sautéed to fragrant perfection. Adding diced tomatoes, rich tomato paste, and a thoughtful array of spices like cumin, chili powder, regular and smoked paprika, and dried oregano creates a complex, savory profile that’s incredibly satisfying. A touch of brown or coconut sugar balances the acidity and enhances the overall sweetness, making this chili both robust and perfectly balanced. Simmering it gently allows all these flavors to meld beautifully, creating a thick, rich chili that clings perfectly to the fries.
The Star Component: Butternut Squash “Cheese” Sauce
The butternut squash “cheese” sauce is truly the secret weapon behind these amazing fries. It’s what gives them that incredibly creamy, savory, and cheesy experience without any dairy. Butternut squash, when roasted until fork-tender, develops a natural sweetness and creamy texture that blends beautifully into a rich sauce. Combined with a single clove of garlic for a subtle pungent kick, nutritional yeast for that unmistakable umami and cheesy flavor, a whisper of onion powder, and a pinch of ground nutmeg to add warmth and depth, this sauce is nothing short of culinary alchemy. A touch of salt and pepper brings out all the flavors, and a bit of water helps achieve the perfect pourable consistency. This sauce isn’t just a substitute; it’s a delicious creation in its own right, proving that plant-based eating can be incredibly indulgent and flavorful.

Yield: 4 1x
Ingredients
Scale
French Fries:
- 2 large russet potatoes
- olive oil
- salt
- pepper
Chili:
- 1 1/2 cup cooked beans, I used 3/4 cup kidney beans and 3/4 cup pinto beans, or 1–15 oz can of beans (drained and rinsed)
- 2 tablespoons diced red onion
- 1 clove garlic, minced
- 1 medium size tomato, diced small
- 2 tablespoons tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/4 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 teaspoon brown sugar or coconut sugar
- 1 tablespoon water or vegetable broth
Cheese Sauce:
- 2 1/2 cups diced butternut squash (about half of a small squash)
- 1 clove garlic
- 2 tablespoons nutritional yeast
- 1/8 teaspoon onion powder
- 1 pinch ground nutmeg
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup water, or more depending on desired consistency
Optional Toppings:
- Jalapeno slices for topping (fresh or pickled)
- Sliced green onions (scallions)
- Sliced black olives
- Fresh cilantro, chopped
- Vegan sour cream or cashew cream
Instructions
- Preheat your oven to 375 degrees F (190°C). Arrange the diced butternut squash evenly onto a large sheet pan. Drizzle with olive oil and generously season with salt and pepper, then toss gently to ensure every piece is coated. Place the pan in the preheated oven and bake for 35-40 minutes, or until the squash is perfectly fork-tender and lightly caramelized, making sure to flip the squash halfway through baking for even cooking.
- Once the roasted butternut squash is done, carefully transfer it to a high-speed blender. Add the remaining cheese sauce ingredients: 1 clove of garlic, 2 tablespoons of nutritional yeast, 1/8 teaspoon of onion powder, a pinch of ground nutmeg, 1/4 teaspoon of salt, 1/8 teaspoon of pepper, and 1 cup of water. Blend until the mixture is completely smooth and creamy. If you prefer a thinner consistency, add a little more water, one tablespoon at a time, until it reaches your desired creaminess. Set this delightful cheese sauce aside.
- Next, prepare the chili. Heat a medium-sized pot over medium heat. Coat the bottom of the pot with a small amount of olive oil. Add the diced red onion and minced garlic, stirring for a few minutes until the onion starts to soften and become translucent, releasing its sweet aroma. Then, add the diced tomato, cooked beans (kidney and pinto, or your preferred variety), tomato paste, water (or vegetable broth), and all the seasonings (cumin, chili powder, paprika, smoked paprika, dried oregano, salt, pepper, and brown/coconut sugar). Stir everything together thoroughly. Bring the mixture to a gentle simmer and let it cook for 10-15 minutes, allowing the flavors to meld and the chili to thicken slightly. Keep it warm until ready to assemble.
- Now, it’s time for the fries! Increase your oven temperature to 400 degrees F (200°C). Take your russet potatoes, cut them in half lengthwise, and then slice each half into uniform French fry sticks. Lay a piece of parchment paper on a large sheet pan (this helps prevent sticking and makes cleanup easier) and spread the cut potatoes in a single layer. Drizzle generously with olive oil and season with salt and pepper. Toss the potatoes to ensure they are evenly coated. Place the fries into the hot oven and bake for approximately 30 minutes, or until they are beautifully golden brown, crisp on the outside, and tender on the inside. Remember to flip them once halfway through baking to ensure even crispness.
- Once your homemade fries are perfectly cooked and crispy, it’s time to assemble your masterpiece! Carefully remove the fries from the oven. Spoon a generous amount of the warm homemade chili over the fries, followed by a decadent drizzle of the butternut squash cheese sauce. Gently place the pan back into the oven for an additional 5-10 minutes, just long enough for everything to be thoroughly warmed through and the flavors to truly meld together. For an extra flourish and a touch of heat, top with fresh jalapeno slices and thinly sliced green onions (scallions) before serving. For even more flavor, consider adding a sprinkle of chopped fresh cilantro or some sliced black olives. Serve immediately and enjoy every glorious bite!
