Why These Filling Vegetarian Wraps Will Become Your New Favorite Lunch
Discover the compelling reasons why these high-protein vegetarian wraps are poised to become a staple in your meal rotation:
- Effortless Preparation & Speedy Assembly: One of the standout features of this recipe is its incredible ease. Once your vegetables are roasted and your dressing is prepared, assembling these high-protein wraps is remarkably quick. While I don’t typically assemble my wraps too far in advance to avoid any potential sogginess, the beauty of this recipe lies in its adaptability for advanced meal prep. By simply chopping and roasting your veggies ahead of time, you can construct a fresh, delicious wrap in under five minutes each morning, perfect for a grab-and-go lunch.
- A True Protein Powerhouse: These wraps are meticulously crafted to provide a significant boost of plant-based protein. The protein comes from multiple sources: the creamy hummus derived from chickpeas, the firm and flavorful tofu, the nutrient-dense quinoa, and even the rich, yogurt-based dressing. This multi-source protein approach ensures maximum satiety, keeping hunger at bay and providing sustained energy levels for hours. For those who aren’t dairy-free and wish to further increase the protein content, a slice of your favorite cheese can be a wonderful addition.
- The Ultimate Healthy & Satisfying Lunch Option: Beyond their impressive protein content, these wraps are designed to be an ideal lunch. Their wholesome ingredients contribute to a feeling of well-being, providing the necessary nutrients without weighing you down. The combination of complex carbohydrates, healthy fats, and ample protein makes them a perfect midday meal that is both filling and deeply satisfying. Pair them with a side of crunchy fruit, a handful of chips, or additional fresh vegetables for a complete and enjoyable experience.

Nourish Your Body: The Benefits of Each High-Protein Ingredient
These wraps aren’t just delicious; they’re a nutritional powerhouse. Let’s explore the incredible benefits each core ingredient brings to your plate:
Tofu: The Plant-Based Muscle Builder
Tofu, a versatile ingredient derived from soybeans, stands out as a complete protein, meaning it contains all nine essential amino acids that your body cannot produce on its own. These amino acids are crucial for building and repairing muscle tissue, making tofu an excellent choice for vegetarians, vegans, and anyone looking to increase their plant-based protein intake. A mere half cup of tofu can provide around 10 grams of protein, making it an efficient source. Beyond protein, tofu is rich in vital minerals such as calcium and magnesium, both of which are fundamental for maintaining strong, healthy bones and preventing conditions like osteoporosis. Furthermore, tofu contains isoflavones, plant compounds known for their antioxidant properties and potential role in reducing the risk of certain chronic diseases.
Quinoa: The Ancient Grain for Modern Health
Quinoa, often referred to as a “supergrain,” is naturally gluten-free and packed with an impressive array of nutrients. Like tofu, quinoa is also a complete protein, a rarity among plant-based foods. Its high protein content, combined with an abundance of dietary fiber, makes quinoa exceptionally satiating. This powerful combination helps keep you feeling full for extended periods, which can be a valuable asset for weight management and preventing overeating. Beyond protein and fiber, quinoa is a great source of numerous vitamins and minerals, including iron, magnesium, phosphorus, folate, and B vitamins, contributing to overall energy production and bodily functions.
Hummus/Chickpeas: Digestive Health Champions
The star ingredient of hummus, chickpeas, are renowned for their high fiber content, which is absolutely essential for optimal digestive health. A single cup of cooked chickpeas provides approximately 12 grams of fiber, a significant portion of your daily recommended intake. Chickpeas contain both soluble and insoluble fiber, working synergistically to support a healthy digestive system. Soluble fiber dissolves in water, forming a gel-like substance that helps regulate nutrient absorption, stabilize blood sugar levels, and binds to bile acids in the digestive tract, aiding in the removal of toxins from the body. Insoluble fiber, on the other hand, adds bulk to your stool, promoting regular bowel movements and ensuring smooth transit through the digestive system. Together, these fibers contribute to a healthy gut microbiome and overall digestive wellness.
Roasted Vegetables: A Rainbow of Nutrients
The roasted vegetables in these wraps aren’t just for flavor and texture; they’re also packed with essential vitamins, minerals, and antioxidants. Bell peppers are excellent sources of Vitamin C and A, while zucchini and summer squash provide hydration and various B vitamins. Onions add a pungent kick and contain beneficial compounds like quercetin. Roasting these vegetables caramelizes their natural sugars, enhancing their sweetness and creating a deeply satisfying flavor profile that complements the other ingredients beautifully. Consuming a wide variety of colorful vegetables is key to a robust immune system and overall health.

Gather Your Ingredients: What You’ll Need for These Delicious Wraps
Preparing these satisfying wraps starts with assembling the right components. Here’s a detailed look at the ingredients:
- Tortillas: For wraps that can hold a generous amount of filling, I highly recommend using large, burrito-sized tortillas. These provide ample surface area to pack in all the delicious ingredients without tearing. You can opt for classic plain flour tortillas or explore flavored varieties like spinach or whole wheat for an added nutritional boost and different taste. If you’re following a gluten-free diet, simply choose your favorite gluten-free wrap alternative. A helpful tip for all tortillas, especially gluten-free ones, is to gently warm them in the microwave or on the stovetop for a few seconds before assembling. This makes them more pliable and significantly easier to roll without cracking or breaking.
- Hummus: The creamy foundation of these wraps! I personally enjoy using a roasted garlic hummus for its depth of flavor, but the beauty of this recipe is its flexibility. Feel free to use any flavor of hummus that you love – red pepper, plain, or spicy variations would all be fantastic. Both store-bought options, for ultimate convenience, and homemade hummus, for a fresher taste, work wonderfully in this recipe.
- Tofu: To keep preparation quick and easy, I utilize store-bought baked tofu. This pre-cooked and pre-flavored tofu is a fantastic shortcut; it requires no heating or extra seasoning. Simply slice it to your desired thickness and add it directly to your wrap. You can often find baked tofu in various flavors such as teriyaki, sriracha, or savory herb, allowing you to customize the taste profile of your wraps. If you prefer to bake your own tofu from scratch, remember to press it first to remove excess water, then marinate and bake until firm and golden.
- Quinoa: This recipe calls for cooked quinoa, a nutritional powerhouse. I typically use tri-color quinoa for its visual appeal and slightly nutty flavor, but regular white quinoa will work just as well. Quinoa provides an excellent source of plant-based protein and fiber, making it a superior choice for satiety. However, if quinoa isn’t your preference, feel free to substitute it with other cooked grains like brown rice, farro, or couscous.
- Roasted Vegetables: The vibrant heart of these wraps! My go-to combination includes thinly sliced bell peppers (red and yellow for color), zucchini, summer squash, and red onion. Roasting these vegetables brings out their natural sweetness and tenderness, adding incredible flavor and texture. The key is to select vegetables that have similar roasting times to ensure even cooking. Other excellent choices for roasting include broccoli florets, asparagus spears, carrots, or mushrooms. Don’t hesitate to experiment with your favorite seasonal vegetables!
- Herbed Yogurt Dressing: The secret weapon for incredible flavor! My Herbed Yogurt Dressing is an outstanding complement to these wraps, infusing them with a fresh, bright, and savory taste. This dressing also conveniently adds an extra touch of protein from the yogurt base. If time is a constraint, or if you prefer a different flavor profile, you can easily substitute it with your favorite store-bought bottled dressing. A green goddess dressing or a creamy lemon-herb vinaigrette would be excellent choices.

Step-by-Step Guide: How To Make High-Protein Vegetarian Wraps
Follow these simple steps to create your own delicious and protein-packed vegetarian wraps:
- Prepare the Roasted Vegetables: Begin by preheating your oven to 425 degrees Fahrenheit (220 degrees Celsius). On a large sheet pan, arrange all of your thinly sliced vegetables. Drizzle them generously with olive oil, then season with salt and black pepper. Toss gently to ensure all the vegetables are evenly coated. Roast in the preheated oven for approximately 25-30 minutes, or until the vegetables are fork-tender and begin to develop a beautiful golden-brown caramelization. Remember to flip them once halfway through the cooking time to ensure even roasting. Once cooked, remove from the oven and set aside to cool slightly.
- Craft Your Dressing & Prep Tortillas: While the vegetables are roasting, prepare your Herbed Yogurt Dressing. The full recipe for this dressing typically yields more than you’ll need for four wraps, so feel free to halve the recipe if desired. Alternatively, for ultimate convenience, you can opt for your favorite store-bought dressing – a zesty green goddess or a creamy herb dressing would complement these wraps perfectly. Next, gently warm your tortillas. You can do this by heating each tortilla individually in the microwave for 10-15 seconds, or briefly on a dry stovetop pan for about 15-30 seconds per side. Warming makes the tortillas more pliable and prevents them from cracking or tearing during the rolling process.
- Assemble Your Wraps: Lay each warmed tortilla out on a clean, flat surface. To each wrap, layer the ingredients in the following order for optimal distribution and rolling:
- Spread about 1/3 cup of your favorite hummus evenly over the tortilla.
- Add 1/2 cup of cooked quinoa over the hummus.
- Spoon 1/4 cup of the prepared Herbed Yogurt Dressing (or your chosen dressing) on top. For an extra burst of freshness, sprinkle some chopped fresh herbs like cilantro or parsley at this stage.
- Place 2 slices of the baked tofu over the dressing.
- Finally, distribute about 1/4 of the roasted vegetables evenly across the wrap.
- Fold & Seal (Optional): Carefully fold the opposite sides of the tortilla inwards, over the filling. Then, starting from one of the unfolded ends, roll the tortilla up tightly, ensuring all the ingredients are securely enclosed. For an extra measure to prevent the wraps from unrolling and to add a delightful crispiness, you can optionally seal the bottom of the wraps. Simply heat a hot pan with a little cooking spray or a pat of butter, and place the seam-side down for a minute or two until lightly golden and sealed. This step is entirely optional but highly recommended for better stability. Once rolled, cut each wrap in half, diagonally, and serve immediately. Enjoy your vibrant wraps with a side of fresh fruit, your favorite potato chips, or extra fresh vegetables for a complete meal.

Recipe Frequently Asked Questions
Here are some common questions and helpful answers regarding these high-protein vegetarian wraps:
- How can I make this recipe gluten-free? It’s incredibly simple! Just ensure you use your favorite certified gluten-free wraps or tortillas. All other ingredients in this recipe are naturally gluten-free.
- Can this recipe be made vegan? Absolutely! To make these wraps fully vegan, simply substitute the Herbed Yogurt Dressing with a plant-based yogurt alternative, or use a vegan bottled dressing of your choice. All other ingredients (hummus, quinoa, tofu, vegetables) are inherently vegan.
- Can the quinoa be substituted with another grain? Yes, certainly! While quinoa offers a fantastic protein boost, you are welcome to use another cooked grain if you prefer. Excellent alternatives include brown rice, farro, couscous, or even a mix of grains.
- Is it possible to add more vegetables to the wraps? Definitely! Feel free to customize your wraps with additional vegetables. As long as there’s enough room in the tortilla to roll it up, you can add extra greens like spinach or mixed spring greens, shredded carrots, cucumber slices, or even roasted sweet potato.
- Can I prepare these wraps in advance for meal prep? You can definitely do some meal prepping! I find that assembling the wraps fresh each morning for lunch that day yields the best results. While you can prep the roasted vegetables, cooked quinoa, and dressing a few days ahead, I generally wouldn’t recommend assembling the entire wrap too far in advance. Wraps tend to get soggy if they sit for too long, especially once the dressing is added.
- How long do leftovers last? If you have any leftover ingredients or fully assembled wraps (ideally without dressing added until just before eating), they should be stored in an airtight container in the refrigerator. They typically remain fresh and delicious for about 3-4 days.

Description
These High Protein Vegetarian Wraps are packed with hummus, quinoa, tofu, and vegetables. Once all ingredients are prepped, they are quick and easy to assemble for a healthy lunch that can be taken on the go. These wraps can be served chilled or warm, depending on what you prefer. Enjoy these nutrient-dense wraps with a side of fruit, chips, or fresh veggies.
Ingredients
- 4 large burrito sized wraps
- 1 1/3 cup hummus, your favorite kind
- 2 cups cooked quinoa, tri-color or regular
- 1 (7 oz) package baked tofu, flavor of choice (with each piece cut into 4 thinner slices)
- 1 cup Herbed Yogurt Dressing, or your favorite herby/green goddess style dressing
- Chopped fresh herbs, like cilantro and parsley (optional)
For the Roasted Vegetables:
- 1 large red bell pepper, thinly sliced
- 1 large yellow bell pepper, thinly sliced
- 1 small zucchini, thinly sliced
- 1 small summer squash, thinly sliced
- 1/2 large red onion, thinly sliced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat oven to 425 degrees F. Add all sliced veggies to a large sheet pan and then toss with the olive oil, salt, and pepper. Roast vegetables until fork tender and starting to brown, about 25-30 minutes, flipping once. Set aside and let cool.
- Make the Herbed Yogurt Dressing. The full recipe does make more dressing than you would need for four wraps, so you can cut it in half if you like. You can also just use your favorite bottled dressing, if you prefer.* Heat your tortilla in the microwave, or on the stovetop, to loosen it up so that it doesn’t break, or tear, when rolling up.
- Lay wraps out on a flat surface and to each wrap, layer 1/3 cup hummus, 1/2 cup quinoa, 1/4 cup dressing (and some chopped fresh herbs on top of dressing if you like) 2 slices of the baked tofu and then 1/4 of the roasted vegetables.
- Carefully fold the sides of the tortilla in, over all the ingredients, and then roll up tightly. I like to seal the bottom of the wraps in a hot pan with some cooking spray, just so they stay together better, but that step is optional. Cut wraps in half and enjoy with fruit, chips, or veggies.
Notes
*If using your own dressing, I would suggest something herby, like a green goddess dressing.
Each wrap gets: 1/3 cup hummus, 1/2 cup quinoa, 2 slices baked tofu, 1/4th of the roasted veggies, and about 1/4 cup dressing. You can easily increase, or reduce, the amount of ingredients in each wrap if desired though.
