We believe food should be both delicious and nutritious. This soup is generously loaded with vibrant vegetables like carrots, celery, and onions, providing a spectrum of essential vitamins, minerals, and antioxidants. Chickpeas, the star protein of this dish, are a phenomenal plant-based alternative to chicken. They offer a substantial amount of protein and fiber, making this soup incredibly hearty and satisfying. This isn’t just a side dish; it’s a complete, wholesome meal that will keep you feeling full and energized.

The Healing Power of Every Spoonful: Benefits Beyond Comfort

This isn’t just a delicious soup; it’s a functional food that offers significant health benefits, making it an excellent choice for supporting your body’s wellness. When you enjoy a bowl of this nourishing chickpea noodle soup, you’re treating yourself to more than just a meal:

  • Boost Your Digestive Health

A healthy digestive system is foundational to overall well-being, and fiber plays a crucial role. Chickpeas are an exceptional source of dietary fiber, boasting an impressive 35 grams per cup of cooked beans. This fiber content is a beneficial mix of both soluble and insoluble types. Soluble fiber helps regulate nutrient absorption and binds to bile in the digestive tract, aiding in the removal of toxins. Insoluble fiber adds bulk to your stool, promoting regular bowel movements and ensuring your digestive process runs smoothly and efficiently. This soup is a delicious way to keep your gut happy and healthy.

  • Rich in Disease-Fighting Antioxidants

The vibrant colors in our soup, particularly from carrots and celery, signal a rich presence of antioxidants. These powerful compounds are vital for protecting our cells from damage caused by free radicals – unstable molecules that can contribute to chronic diseases and premature aging. By incorporating a variety of colorful vegetables into your diet through soups like this, you actively strengthen your body’s defense mechanisms, promoting long-term health and vitality.

  • Support Your Immune System

For centuries, warm broths and soups have been revered for their healing properties, especially during times of illness. Our Vegan Chickpea Noodle Soup is no exception. It’s packed with essential vitamins and minerals from its diverse ingredients, all working synergistically to bolster your immune response. The warm, hydrating broth helps to replenish electrolytes and keep you well-hydrated, which is crucial for recovery. Furthermore, the steaming vapors from the hot soup can work wonders in clearing nasal passages, offering natural relief from congestion and making every spoonful a step towards feeling better.

Essential Ingredients for Your Best Chickpea Noodle Soup

Creating this satisfying vegan soup relies on a thoughtful selection of fresh, high-quality ingredients that come together to form a symphony of flavors and textures.

  • The Hearty Foundation: Noodles

The choice of noodles can truly define your soup experience. While ditalini pasta was chosen for its delightful, bite-sized shape that complements the chickpeas, feel free to use your favorite pasta. Egg noodles, rotini, or even alphabet pasta would work wonderfully. You can cook the pasta directly in the soup, allowing it to absorb the rich broth flavors, or pre-cook it separately and add it at the very end to prevent it from becoming too soft, especially if you plan on having leftovers. For those with dietary restrictions, gluten-free pasta can be easily substituted without compromising taste or texture.

  • Protein Powerhouse: Chickpeas

Chickpeas are the star of this vegan show, providing a fantastic source of plant-based protein and fiber that makes this soup incredibly filling. Two cans of drained and rinsed chickpeas are called for in this recipe, offering a robust texture and satisfying bite. If you’re looking for variations, white beans (like cannellini or navy beans) or even diced, firm tofu can be excellent substitutes, each adding its unique character to the soup.

  • A Rainbow of Veggies: The Flavorful Base

The foundation of any great soup begins with a classic mirepoix of onion, celery, and carrots. These aromatic vegetables are sautéed to create a sweet and savory base that builds incredible depth of flavor. Beyond these staples, feel free to unleash your creativity! Adding extra vegetables such as chopped spinach or kale at the end, or even broccoli florets, peas, or corn during the cooking process, will enhance both the nutritional profile and visual appeal of your soup.

  • The Flavorful Broth: The Soul of the Soup

The broth is the heart and soul of any soup, and for this vegan version, a high-quality broth is paramount. A vegan “chicken”-flavored broth concentrate is highly recommended, as it mimics the traditional flavor profile wonderfully. These concentrates are often found in most grocery stores or online and allow you to adjust the intensity of the flavor. However, if unavailable, a good quality regular vegetable broth will also create a delicious and satisfying soup.

  • Aromatic Enhancers: Garlic and Ginger

While garlic is a common player in comforting soups, fresh ginger adds a wonderfully bright, slightly spicy, and deeply warming note that elevates this plant-based version. Though not traditional in every chicken noodle soup, ginger’s unique flavor profile and potential immune-boosting properties make it a welcome addition. Don’t be shy with generous amounts of both minced garlic and grated ginger; they contribute significantly to the soup’s aromatic complexity and healing qualities.

  • Fresh Herbs for Brightness: Thyme, Rosemary, and Parsley

Fresh herbs are key to infusing a vibrant, aromatic freshness into your soup. Fresh thyme and rosemary are incorporated during the cooking process, allowing their earthy, woodsy notes to permeate the broth. A generous sprinkle of fresh parsley is then stirred in just before serving, adding a burst of color and a bright, herbaceous finish that truly makes the flavors sing. Always opt for fresh herbs when possible for the best results.

  • The Zesty Finish: Lemon Juice

A final squeeze of fresh lemon juice is entirely optional but highly recommended. It adds a subtle tang and brightness that cuts through the richness of the soup, awakening the flavors and leaving a refreshing zing on your palate. It’s a small addition that makes a big impact, especially if you appreciate a touch of citrus in your savory dishes.

Step-by-Step: Crafting Your Perfect Vegetarian Chickpea Noodle Soup

Making this comforting soup is surprisingly simple, even for novice cooks. Follow these straightforward steps to create a delicious and nourishing meal:

  1. Sauté the Aromatics: Begin by heating a large, heavy-bottomed pot or Dutch oven over medium heat. Add the extra virgin olive oil. Once the oil shimmers, add the diced yellow onion, carrots, and celery. Sprinkle with a generous pinch of salt and stir to combine. Allow these vegetables to cook gently, stirring occasionally, until they soften and become translucent, which should take about 5 to 7 minutes. This step is crucial for building the foundational flavor of your soup. Next, add the minced garlic, grated fresh ginger, and chopped fresh thyme. Continue to cook for another 2 minutes, stirring constantly, until the aromatics are fragrant and wonderfully aromatic. Be careful not to burn the garlic.

  2. Simmer and Introduce Key Ingredients: Now it’s time to bring the soup to life. Add the drained and rinsed chickpeas, followed by the vegetable broth. Season with a big pinch of salt and freshly ground black pepper. Stir all the ingredients together thoroughly. Cover the pot with a lid and increase the heat slightly to bring the soup to a rolling boil. Once boiling vigorously, stir in the dried pasta of your choice. Reduce the heat to a simmer and cook the pasta according to package directions, typically about 10 minutes, until it’s just cooked through (al dente) but not mushy. Keep an eye on it to prevent overcooking.

  3. Finish and Serve: Once the pasta is perfectly cooked, remove the pot from the heat. Stir in a small handful of freshly chopped parsley, which adds a burst of vibrant color and fresh, herbaceous flavor. If desired, squeeze in the juice of half a fresh lemon; this brightens the entire soup and adds a delightful zesty kick. Taste the soup and adjust the seasoning with additional salt and pepper if needed. Ladle the hot soup into bowls and serve immediately. It pairs wonderfully with crunchy crackers, a slice of crusty bread for dipping, or a simple side salad to complete your nourishing meal.

Description

My flavorful Chickpea Noodle Soup is packed with lots of veggies and protein. It’s a vegan version of the classic chicken noodle soup that we all crave when we’re sick. This plant based meal is super cozy and inviting and will warm you up, from the inside out. Chickpea noodle soup is the perfect lunch or dinner for a cold winter day. Serve with bread, crackers or salad.

Ingredients

Scale

  • 1 tablespoon extra virgin olive oil, or your favorite oil
  • 1/2 large yellow onion, diced
  • 1 1/2 cups diced celery
  • 1 1/2 cups diced carrot
  • 24 cloves garlic, minced
  • 12 teaspoons minced fresh ginger
  • 2 teaspoons chopped fresh herbs (I like to do a mixture of thyme and rosemary)
  • 2 (15 oz) cans chickpeas, drained and rinsed
  • 200 grams dried ditalini pasta, or your favorite kind
  • 8 cups vegetable broth (I like to use this chicken flavored veggie broth concentrate)
  • Salt and black pepper, to taste
  • Chopped fresh parsley
  • Juice of 1/2 lemon

Instructions

  1. Heat a large pot over medium heat and add in the olive oil. Once oil is hot, add in the diced onion, carrot and celery. Sprinkle in a pinch of salt and mix everything together. Cook veggies until softened, about 5 minutes. Next, add in the minced garlic, ginger and thyme and cook for another 2 minutes.
  2. Add in the chickpeas, vegetable broth and a big pinch of salt and pepper. Mix everything together well, place the lid on and let soup come to a boil. Once boiling, add in the dried pasta and let cook until the pasta is just cooked through, about 10 minutes.
  3. Remove soup from the heat and stir in a small handful of chopped fresh parsley and a squeeze of fresh lemon juice. Add any extra salt and pepper needed. Serve soup with crackers, bread or salad, if desired.

Notes

Make sure you’re using a good quality broth for this soup. I like to use concentrated vegan chicken broth that I just add water to. I like it because you can add extra concentrate if you want a stronger flavor for your soup.
