  • 1 cup plus 2 tablespoons Bob’s Red Mill Gluten Free 1:1 Baking Flour*
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup granulated sugar
  • 1 tablespoon brown sugar
  • 1/4 cup vegetable oil, or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 cup applesauce
  • 1/2 cup almond milk
  • 23 pints non-dairy ice cream, I used So Delicious Vanilla Coconut Milk Ice Cream**
  • Chopped walnuts, if desired

Instructions

  1. Pre-heat your oven to 325 degrees Fahrenheit (approximately 160 degrees Celsius).
  2. Bring a medium-sized pot of water to a rolling boil. While the water is heating, fill a large bowl with ice water and set it aside; this will be your ice bath. Once the water is boiling, add the grated carrots and let them blanch for about 45 seconds. Immediately drain the blanched carrots and transfer them into the prepared ice bath to stop the cooking process. Once completely cooled, thoroughly pat the carrots dry with a clean kitchen towel or paper towels, squeezing out any excess water. Set the dried carrots aside.
  3. In a medium-sized mixing bowl, combine the dry ingredients: Bob’s Red Mill Gluten Free 1:1 Baking Flour, baking soda, baking powder, salt, ground cinnamon, ground ginger, and ground nutmeg. Whisk them together until well combined. In a separate, larger mixing bowl, add the granulated sugar, brown sugar, and vegetable oil (or melted coconut oil). Cream these ingredients together until smooth and well incorporated. Then, add the vanilla extract, almond milk, and applesauce, mixing again until everything is evenly combined. Gradually add the dry mixture to the wet mixture, beating with an electric mixer on low speed until the batter is smooth and just combined. Be careful not to overmix. Finally, using a spoon or spatula, gently fold in the prepared, dried carrots.
  4. Line a 9×13 inch baking dish with parchment paper, allowing some overhang on the sides to create handles. This will help you lift the cake out later. Evenly divide the carrot cake batter into two separate halves. Spread the first half of the batter thinly and evenly into the prepared baking dish. It may initially seem like there isn’t enough batter to cover the entire dish, but by slowly and carefully spreading it out with a plastic spatula or the back of a spoon, you’ll find it covers the area perfectly. Aim for a consistent thickness across the entire layer for even baking.
  5. Bake this first carrot cake layer for approximately 20 minutes, or until it’s cooked through and a toothpick inserted into the center comes out clean. Once baked, carefully remove it from the oven and transfer it to a wire rack to cool completely. Repeat this process with the remaining half of the batter to create your second cake layer. While both cake layers are cooling, remove the non-dairy ice cream from the freezer and allow it to thaw slightly until it’s soft enough to be easily whipped.
  6. Once both carrot cake layers are fully cooled, prepare for assembly. Carefully flip one of the carrot cake sheets over and slide it back into a clean, parchment paper-lined baking dish (or use the same one, cleaned and relined). At this point, the ice cream should be adequately thawed. Transfer the softened ice cream to a large bowl and whip it with an electric mixer until it becomes smooth and creamy, almost like a soft-serve consistency. Evenly spread this whipped ice cream over the bottom layer of carrot cake in the dish. Then, gently place the second carrot cake layer on top, pressing down lightly to ensure it adheres to the ice cream. Freeze the assembled ice cream sandwich for a minimum of 6 hours, though overnight is truly ideal to allow it to firm up completely and for the flavors to meld beautifully.
  7. When you’re ready to enjoy your delicious creation, remove the frozen slab from the freezer and let it thaw at room temperature for a few minutes. This slight softening will make it much easier to cut. Slice them into your desired shapes and sizes; I prefer using circular cookie cutters to create classic ice cream sandwich rounds, and I was able to yield about 8 such sandwiches from this recipe.
  8. If you wish to add an extra layer of flavor and texture, roll the outside edges of your freshly cut ice cream sandwiches in chopped walnuts. This step works best when the ice cream is still slightly softened from thawing, as it helps the walnuts adhere better. Serve immediately and savor every bite of this glorious vegan and gluten-free treat!

*I haven’t personally tried this recipe with any other type of flour, but it would likely work well with a different brand of gluten-free all-purpose flour blend. For those who do not require a gluten-free option, regular all-purpose flour could also be used, adjusting liquids as needed if the batter consistency differs.

**I recommend using 3 pints of non-dairy ice cream if you, like me, enjoy a substantial and indulgent ice cream layer in your sandwiches. However, you can certainly adjust the amount of ice cream to 2 pints if you prefer a thinner layer or wish to reduce the overall richness.
