  • 17 ounce can diced green chilies, drained well (mild recommended for balanced flavor)
  • 3 tablespoons bread crumbs (use gluten-free if necessary)
  • 1 tablespoon chopped fresh cilantro
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika

Arrange the diced sweet potatoes in a single layer on a baking sheet. Drizzle them with about 1 teaspoon of olive oil and season lightly with a pinch of salt and black pepper. Roast the sweet potatoes for approximately 25-30 minutes, or until they are fork-tender and begin to brown slightly on the edges. For the best burger texture, allow both the cooked rice and roasted sweet potatoes to cool for at least 30 minutes before proceeding. This cooling step helps the ingredients bind together better and prevents a mushy texture.
  2. Once cooled, combine the cooked rice, roasted sweet potato, and rinsed, drained black beans in a food processor. Pulse for about 7 seconds, then scrape down the sides of the bowl to ensure even mixing. Pulse for another 3 seconds. The goal is to have the ingredients well incorporated but not completely pureed – you still want some texture from the beans and sweet potato, which adds to the burger’s rustic appeal and satisfying mouthfeel.
  3. Transfer the veggie burger mixture from the food processor to a large mixing bowl. Add the bread crumbs (ensuring they are gluten-free if needed), fresh chopped cilantro, minced garlic, salt, ground cumin, and paprika. Using your hands, gently mix all the ingredients together until everything is evenly combined. Be careful not to overmix, as this can lead to a dense burger.
  4. Divide the mixture into 6 equal portions and form them into patties, about 1-inch thick. Place these formed veggie burger patties on an oven tray or plate lined with wax paper to prevent sticking. Refrigerate the patties for at least 30 minutes. This crucial step allows the flavors to meld and helps the patties firm up, making them easier to handle and less likely to fall apart during cooking. For an even firmer burger, you can refrigerate them for several hours or even overnight.
  5. To cook the burgers, heat a large non-stick pan or cast-iron skillet over medium heat. Drizzle a small amount of olive oil into the pan. Once the oil is shimmering, carefully place the chilled veggie burgers in the pan, making sure not to overcrowd it. Cook for about 5 minutes on each side, until they are beautifully golden brown, heated through, and have a slight crust. Alternatively, these burgers can be grilled on a lightly oiled grill or baked in the oven at 375°F (190°C) for 15-20 minutes, flipping halfway, until heated through and firm.
